The Early Bird Catches A Nap Later In The Afternoon

Ya know, for the longest time I always said that I was a morning person. There is nothing I love more than waking up bright and early to enjoy a nice hot cup of tea with my chosen breakfast cuddled up in a big ol’ chair.

Key phrase.

BRIGHT and early

…meaning the sun is up…

…because that’s when we’re supposed to wake up!

Back in the day when folks used to wake up when the roosters crowed and stuff…even the roosters waited until the sun was up!! Baristas, on the other hand, need to be up to serve the masses their early morning joe. *sigh*

4:30a.m. That’s when I was up this morning. That’s SO flippin’ early !! ย When I woke up it was still dark outside. And everyone else in the house was sleeping…except the puppy of course…who spent the early morning parading me around outside in my pj’s half asleep while he peed and tried to catch bugs in his mouth. Lil’ butthead. Cute one though!

Okay, I’m ranting. I know. I really do love the morning, I promise.

The other evening I decided that just because I was getting up SOOOO early, didn’t mean I couldn’t enjoy my morning and my breakfast!

The following is the result of my epiphany. I took flavors I know I love, ingredients I know are good for me, and chocolate because…well…if I’m getting up THAT early I freakin’ deserve some chocolate! Right? Right.

So, first… the photo…which kind of stinks. But really… it was about 5 a.m. when I took it…on my phone…because my camera is hating on me lately. It should give you a general idea of what the final product looked like. And now, the more important fact, it’s only 4 Weight Watchers Points per serving!! Woot!! And it’s so easy, too! I didn’t even use a mixing bowl. Just whisk everything up right in the pan you pan to bake it in! Here’s the recipe!

Chunky Monkey Oatmeal Bars

  • 1 cup rolled oats
  • 1 cup fiber one cereal, crushed
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • pinch of salt
  • 1 large banana, mashed
  • 1 cup plain, nonfat yogurt
  • 1/ 4 cup egg whites
  • 3 tbsp chunky peanut butter
  • 1/4 cup semi-sweet chocolate chips

Preheat the oven to 375 degrees. In a 9×9 inch baking pan, whisk together everything except oats, cereal and chocolate chips. Whisk well, until everything is combined and smooth.

Gently mix in the oats and cereal. Top with chocolate chips.

Bake for 30-40 minutes, until golden in color and a knife inserted into the center comes out clean. Let cool 10 minutes before slicing into 6 pieces and serving!
