My Brilliant Idea & What I Ate Wednesday #14

Hey Ya’ll! Happy Wednesday!!

Are all of you East Coasters hunkering down for the next storm we’re supposed to be getting tonight?? Maybe I’ll actually have a snow day tomorrow??? I won’t hold my breath, but a gal can dream, can’t she??

Anywho, I had a brilliant idea this week and I’ve decided to share it with all of my favorite What I Ate Wednesday Bloggers.

For a while now, I’ve looked forward to Wednesdays more than any other day of the work week because of the What I Ate Wednesday link up!! Jenn at Peas and Crayons is awesome for having started such a simple thing and having acquired so many participants. I love spending my time going through blogs, drooling over delicious looking food, finding inspiration in others, and interacting with the WIAW community.

Although I love sharing what I eat in a day, my primary focus when I started Twenty-Something & Starving was not just to share my eats, but to share recipes!! I still do, of course, as often as I can anyway. Sometimes, though, convenience outweighs creativity. For the last month or two I’ve found myself stuck in a sort-of-but-not-quite-rut using the same few recipes in rotation every week.  After a long day at work and a super sweaty workout I really just want to come home and put food in my belly as soon as I can. My staples, as of late anyway, include things like Chicken and Black Bean Fajita Burritos, Sesame Chicken Stir Fry, Tilapia Tacos, and Tortilla Pizzas. Johnny and I both enjoy them, they are quick to throw together (always important for me) and they are nice, healthy post-workout meals.

So where’s the brilliant idea?? I’ve decided that I am going to start my own link-up party! One where other healthy living bloggers can share recipes for some of their favorite things using real foods. I shall call it  – Real Food Recipe Roundup with Twenty-Something & Starving!! It’ll be a Thursday thing, so as to not take away from What I Ate Wednesday, which I love so very much. It also gives anyone who chooses to particpate until  Thursday to have their recipe together. I know personally I’ll make something on the weekend and be lucky to have it ready to go for Thursday.

Now, I know there are loads of different ideas as to what constitutes “real food” out there.  What do I mean when I say “real Food?” The way I see it is that real food isn’t complicated. As a woman who, more or less, considers herself a healthy living blogger, I think everything is about balance. I cook with loads of veggies and lean protein, but I also cook with butter and cheese. What I’m looking for in this Real Food Recipe Roundup are real foods made with real ingredients. Other than that, the sky is the limit!! For round one of this round up – which will be next Thursday – let’s start with a recipe in your repertoire that you make again and again and it never fails you! Breakfast, lunch, dinner, or dessert doesn’t matter!! Let’s all just share our recipes!

Now, FINALLY, let’s get to What I Ate Wednesday Monday!

Breakfast: I’m sure you’re shocked by my banana/chocolate chip/oat combo. If it ain’t broke, right?? Anywho, this is actually a new recipe I tried out and it’s quite simple. It’s 2 super ripe bananas (mashed), 1 whole egg and 1 egg white, 2 1/2 cups of rolled oats, 2 scoops of vanilla protein powder (I used Vanilla Almond Designer Whey), 1/3 cup of whole wheat baking mix, 1 cup of lite vanilla soy milk, 1 tablespoon maple syrup, and 1/2 cup of chocolate chips. Mix it all up and bake it at 350 for 35 minutes or until it’s set. Let it cool for 15 or 20 minutes before you slice it into 8 portions. Each portion (according to the calculations on MyFitnessPal) is 206 calories, 33g carbs, 4g fat, 11g protein, 4g fiber, and 8 g sugar. I was actually surprised this was under 300 calories, but I’m totally cool with it, because that leaves more room for the calories in the peanut butter I smear all over the top of it.  I enjoyed this with a mug of decaf earl gray. Noms!

proteinoatsSnacks: Monday’s AM snacks were simple. I had a gala apple and some triscuits with a french onion laughing cow cheese. The triscut picture is recycled because I’m lazy and reallly just wanted to munch.

applesnack2Lunch: Since Sunday wasn’t the healthiest day (though it was quite delicious) I made sure to get my veggies in for lunch Monday. I had a nice big spinach salad with cherry tomatoes, peppers, onions, and black olives with a wee bit of italian dressing. I also has a leftover turkey burger with some 2% american cheese on a toasted whole wheat english muffin. Beige food is so unphotogeneic. Oh wells, it was so tasty either way. I load my turkey burgers with garlic, garlic, and more garlic. It’s impossible for them to taste bad OR take a good photo.

Snacks: Afternoon snackage included a spoonful of Mighty Maple…which I need to replenish my stock of very shortly as I am scraping the jar. Annnnd about 1/2 cup of chocolate cheerios with some skim milk…which I proceeded to drink when I finished the cheerios because calcium and who doesn’t love chocolate milk?! And later I had some carrots with chipotle hummus…which I will also need to resupply with soon. *sigh*  I feel like my appetite is really starting to kick into high gear these last few days what with this whole baby growing inside me thing. I also has two hershey kisses when I got home, which are unpictured…because I was preparing apple crisp for our dinner later on.

 

pb cheerios carrots and hummusDinner: For dinner on Monday we finally got the chance to check out the brand new home of our friends Ashley and Jared. Their house is perfect and adorable and I love it!!  Ashley made a suuuuper yummy white pasta fagioli soup, which I’d never had before and LOVED!! Really any soup you can top with parmesan cheese and red pepper flakes is a winner in my book, but this was so tasty. And as it is still FREEZING outside soup for dinner always makes me happy! We also had salad with some avocado and mushrooms and apparently (this totally blew my mind) there is a mix available for purchase to make your own Red Lobster Cheddar Biscuits. Well… we had some of those, too. And they were amazing. And I ate two of them. Because I love them.  We brought Quincy with us to play with Oliver and they were running around like little crazy men while we ate. They are too cute for words!

the babiesDessert: Since I threw dessert together in 20 minutes before we left to head to their place I decided on my Honey Walnut Apple Crisp. I pretty much followed my recipe exactly except I had to use vegetable oil instead of coconut oil and I added a wee bit of brown sugar to the mix just for fun. Johnny and Jared are really cut from the same cloth, as they were more excited for the Ready Whip that went on top than the were the crisp I think. Silly Boys.

What I Ate Wednesday #13

Greetings and a very happy Hump Day to you all!!

By a show of hands, how many of you are snowed in today??

Heh – perhaps a show of hands wasn’t the best approach. Silly internets.

Either way. This snow and ice is ridiculous! As long as they don’t close the gym today I’m good. Keep your fingers crossed for me!! Come on Central PA and get your act together! 

Oh well, at least I prepared my post early again like a champion!! This week’s What I Ate Wednesday post, brought to you (as always) by the delightful Jenn at Peas and Crayons are actually my Monday eats.  This particular Monday I had quite a few leftovers from our Super Bowl celebration, which were alllllll delicious!

On to the nommies!!

Breakfast: It’s so funny that I don’t think I’ve ever posted this breakfast for a WIAW, but I swear I eat this like 3 times a week. Especially in the cold weather months!! What we have here is 1 banana mashed up with about 1 tablespoon of skim milk mixed together with 1/2 cup of rolled oats, 1/2 scoop of vanilla almond designer whey protein, 1 teaspoon of cinnamon, and 20 semi sweet chocolate chips. I microwave it for 2 minutes and 30 seconds, stop it to mush down anything that may have started to puff up over the side of the bowl, and microwave it for another 3 minutes. It comes out with a mug-cakey like texture…and it’s absolutely delicious! I top it with a tablespoon of peanut butter while it’s still hot so the peanut butter melts all over it. It’s perfect. And it seriously keeps even pregnant me full until lunch time.  I enjoyed it with an 8oz glass of orange juice and my decaf earl gray tea.

Lunch: Please excuse the blurry photo, but I was preeeeeeeettttyy hungry once I sat down with my lunch and I was all *snaps picture* DEVOUR!! This sandwich was essentially what I made for dinner for our Super Bowl shenanigans.  I took an eye round and popped it in the crock pot all day with some garlic powder, onion powder, thyme, salt, pepper, Worcestershire sauce, and beef broth.  I shredded it all up and placed it on a toasted roll brushed with a tiny bit of garlic oil, provolone cheese, and spinach (that spinach was just for me…because I love it…and a vegetable was necessary). I also had a tiny baby pear that I’ve had sitting around for the last week that’s been getting super ripe and a string cheese pretty soon after lunch.

Snacks:  I was just a munch machine on Monday. Heh. Does anyone else just love a good alliteration? Anywho, throughout the afternoon I munched on some more Super Bowl leftover – Sabra Chiptole Hummus (which has officially turned into my new favorite thing and I will have a hard time not eating it every waking moment of every day) with some baby carrots, broccoli, and cauliflower. I also picked up some Popcorners. Anyone try these guys yet? They are like PopChips…but made with corn rather than potatoes. They taste kind of like a tortilla chip and popcorn made delicious babies. They are awesome in this hummus!!! A little later in the afternoon I snagged a greek yogurt with some walnuts mixed in. I knew we were getting groceries and probably wouldn’t have dinner until a little later, so I wanted to make sure I wouldn’t get the hungries while I was shopping. Though Johnny did. So he got a fun pack of peppers, cheddar, and multiseed crackers that he shared with me once we got to Wegmans.

hummusandsuchyogurtDinner: So, in an effort to try and have us BOTH eat less meat and, also, to help reduce our grocery bill a bit, Johnny and I have agreed to having Meatless Monday dinners. We also take Monday night off from the gym, so I do what I can to keep our dinners on the healthier side on Monday – but maybe have something we wouldn’t necessarily enjoy after a tough workout. This one right here is one of my favorite quickies to make. I saute about 4 cloves or garlic in a little olive oil and toss in about 4 giant handfuls of spinach and let it wilt down, adding a littttttle splash of white wine to let it wilt faster. I add strained, cooked pasta to it and a can of rinsed canellini beans. I season it with a healthy dose of garlic powder and toss in about 1/3 cup of diced, roasted red peppers. Mix in a little parmesan cheese, another handful of spinach (I like to have some super wilted and some with a bit more texture), lemon zest, and a touch more olive and dinner is served in 15 minutes! I love this dish so much!

white bean and spinach pastaDessert: Well, technically I don’t know if you’d call this dessert, but I did! I  have the same problem that so many folks do in that I really like to end my day with something sweet. Tonight it was just a big glass of chocolate milk! Skim milk and some Nesquick syrup. I snuggled up with Johnny and Q on the couch in my green fuzzy socks to watch Almost Human and How I Met Your Mother before bed time!

Coulda Been Worse – What I Ate Wednesday #12

Hey Dudes! I hope you’re all swell.  We made it to Wednesday!! (Thank, goodness!!)

I swear I’m already just having “one of those days.” You know the kind I’m talking about. I’ve been lovingly referring to them as “pregnancy days.” Where all I want to do is cry for no reason whatsoever and everything that comes out of everyones mouth sounds stupid and makes me want to punch them in he head. Doesn’t matter what they say. “Hey Jen, look at this puppy!” *punch* “Hey Jen, I  ended world hunger!” *punch* Moody McMooderson today. C’est la vie. At least it’s a little cathartic just to type it all out and share my crazy with all of you. 😀

Oh! And just in case you haven’t had the chance to check it out…we found out if Baby Yoder is a boy or a girl over the weekend!!!! CHECK OUT MY AWESOME POST ABOUT IT!!!

Anywho, on to the foods! Thanks to Jenn at Peas and Crayons for hosting another week of the party.

PreGym Snack: So Johnny and I decided that this week we are going to give morning workouts a try. We’ve never really done it before, and we have no idea what our routine will be like post-baby, so we figured why not give it a whirl! I’m pretty sure he’s enjoying it more than I am, but he also doesn’t have hair to dry and makeup to put on in a locker room. We’ve been up by 5:35 and out the door by 5:50. I don’t want to get up earlier, but I think we may have to if we keep it up. This means we’re at the gym by 6:00 and I need to be in the locker room ready to shower by 6:45 so that I’m ready and raring to head to work by 7:20. I’d really like to be able to get in a full hour. *Sigh* Lots to figure out.  I’m really not super hungry when I get up in the morning, but I know I need to get something down. Yesterday I went with a piece of whole wheat toast with a schmear of smart balance and a schmear of strawberry jam. I poured myself that milk, didn’t drink it, then used it for tea for the rest of the day at work.

toastBreakfast:  Even though it was only 8 degrees out yesterday I still went with a cold breakfast. An icy cold banana (because it was sitting in our 8 degree car while we worked out) with some plain nonfat greek yogurt mixed with a tablespoon on peanut butter, a teaspoon of honey, and a dozen chocolate chips. Cold, but flippin delicious!

breakfastSnack: I definitely could tell that I worked out in the morning, as I was much hungrier than usual after that breakfast. Around 10 I nommed on a hard-boiled egg, some triscuit crackers, and a french onion laughing cow cheese wedge. (French onion are my favorite! Do you have a favorite laughing cow cheese?!)

Lunch: I was thrilled it was finally time for lunch. I don’t often have Lean Cuisines anymore, but when I do, the Tortilla Crusted Fish is one of my favorites. It’s only 300 calories with 14 grams of protein and 9 grams of fat.  I actually cooked this up and steamed a cup of  some fresh spinach in the microwave at the same time. I mixed the rice with the steamed spinach for an extra dose of veggies and I topped the fish with some fresh avocado. I think that when you do have frozen entrees, serving them with a little something fresh in a bowl or on a plate (not the plastic tray it comes in) definitely makes for a much more enjoyable eating experience. I munched on this for lunch while Johnny and I caught up on some Parks & Rec on Hulu+. I love how Chris and Anne are having a baby this season!! They’re so silly and perfect together!

Snack: Me and my Luna Bars. Chocolate peppermint stick is just too delicious for me to stop myself. I could certainly have worse addictions! I also had a string cheese on my way out the door at work…but I figured you guys have seen enough string cheeses for a while…so I didn’t take a pic.

Dinner: Dinner time was fun last night. I’d never made white chicken chili before and I decided it was time I give it a whirl! I sauteed a white onion and yellow bell pepper in just a wee bit of olive oil just until they were soft.  I added about half of a chopped up rotisserie chicken, 2 cans of white beans, 2 cans of green chilies, a can of hominy, and half a box of chicken stock. I seasoned it with 2 teaspoons of garlic powder, 2 teaspoons of cumin, 2 teaspoons of smoked paprika, 1 teaspoon of chili powder, and 1 teaspoon of oregano. I also added the juice and zest of half of a lime. It was amusing, because of our AM workout Johnny was like “I don’t know what to do with my time!” so  he started helping me with dinner by stirring the pot while I added everything to it. Then he was like ” I don’t know how you do this every night…it’s so boring!” Oh, my love bug. What a nut! I also whipped up a quick batch of biscuits with some Bisquick Heart Smart Baking Mix. Just the baking mix and some skim milk whipped up together, dropped on a sheet pan, and baked for 7 minutes at 450. Done and done. Topped my chili with a wee bit of cheese, sliced avocado, and a squeeze more lime. It was delightful!!

Dessert: It’s funny, I look at my day of food and I’m like “Good job, me. You worked out. You ate well. You’re a rock star.” And then I’m like…oh wait you’re pregnant…go ahead and have that cookie.  Heh – just one though! And some skim milk. Definitely could have been worse, right? 😉

What I Ate Wednesday #11

I’m so happy it’s Wednesday!!!! Why??

BECAUSE TOMORROW IS THURSDAY AND I GET MY ULTRASOUND AND I GET TO FIND OUT IF BABY YODER IS A BOY OR A GIRLL!!!!!!!! SQUEEEEEEEEE!!!!!!!

(Okay, I get it in an envelope tomorrow, will give it to my fabulous baker who is making us red velvet cupcakes with a pink or blue center and I get to find out with some of my most closest friends on Saturday if baby is a boy or a girl. But either way…I’M SO EXCITED!!!!!!!!!!!)

I’m also excited because I prepared my eleventh (really, eleven already, wowzers!) What I Ate Wednesday post yesterday. Technically it’s What I Ate Tuesday, but ya know, tomato, tomatoe.  A big thank you to Jenn at Peas and Crayons as usual for hosting this fabulous link up!

On to the foods!

Breakfast: Yum and a half! I had two pieces of my leftover quiche! I didn’t take a picture, because my office was dark and ugly yesterday morning because it was early and snowing out. But here is a pretty one I took when I made the quiche! I also had some decaf earl gray because that’s what I do. slice o'quiche

Snack:  Snack time hit me right at 10 yesterday. I had a S’More Luna Bar and some more decaf earl gray in my Maurader’s Map Mug. Then I snapped a selfie because I felt like it…and obviously you guys can’t get enough of me on here, right? 😀

lunabarmoiLunch: First thing is first – naan bread is delicious. It is not, however, a suitable replacement for pita bread. Wegmans was toooooootally sold out of any whole wheat pita bread when Johnny and I got out groceries on Monday. *womp womp* “It’s okay, Jen,” I thought, “I’ll just get this whole wheat naan instead!” Welp, my lunch yesterday was tasty – buuuuuuuuut  I had to eat it with a fork and knife. It was some whole wheat naan that I toasted and spread with a little of this fancy new avocado hummus I bought on sale. (Avocado hummus tastes like regular hummus, in case you were wondering). I had a Morning Star Farms Mediterranean Chickpea Burger with some feta, spinach, roasted peppers, and red onion. Delish. Not as good as the Spicy Black Bean Burger that I love so much in my opinion, but I’m much more of a “spicy” gal than I am “Mediterranean”.

hummus veggieburgerSnacks: Soon after lunch I had myself and adorable lil’ clementine and two Hershey kisses that have been sitting in my desk drawer for waaay too long and tasted like I may have kept a really ripe banana in there with them at some point in time. Oh well. Chocolate fix achieved. (P.S. Like my new pink planner?! I picked it up over the weekend. I really find that I remember things better when I write them all down. I’ve been using it to log my food and workout summaries, too! Let’s hope I keep it up!)

darlingclementinekissesMore Snacks: Boy am I a hungry monster lately. I picked up some of the new simply balanced sunflower and flax crisps at Target over the weekend. They’re pretty tasty. I love the crunch!! I think they’re a bit too sweet for crackers, though. I had 5 of them to munch with 5 baby slices of cheddar cheese and about 1/2 of a suuuuper ripe pear. (It was so ripe I could only eat half of it…because the other half was mush. Oh well!) I also had another mug’o decaf earl gray. I can’t help it. I love it so much. It was also super cold in my office!snacktime

Dinner: Well my dinner plans went in a few different directions yesterday. I had planned on stir fry because it’s healthy and quick and we go to the gym on Tuesday and aren’t usually home until about 7ish. I was sooooo sad to find out that the gym decided to close at 1:30 because of the snow. It was supposed to be leg day. *sigh* I love leg day! So instead…I made mac & cheese…because that’s definitely not a post-workout meal! And stir fry is out of the question for the rest of the week now, too, because I accidentally knocked the bottle of sesame sauce off the shelf and it shattered all over the floor whilst making dinner. Oh life. Cleaning it up was a family affair. I felt less bad eating mac & cheese after mopping the entire kitchen floor after my hubby and MIL picked up all of the glass pieces and sopped up the sauce. I also made myself a quick salad with butter lettuce, spinach, cherry tomatoes, carrots, peppers, red onion, and a few croutons to eat before I sat down with my mac. I filled myself up with salad first so I didn’t eat half a pound of mac & cheese. I think that makes sense, right? It was probably closer to 1/3 of a pound instead. But ya know – progress!  Also, I’m growing a human sooooooooo imma get my mac & cheese on if I wanna.  Quincy reaaaaaallly wanted to share. I’m afraid not this time, Q!

What I Ate Wednesday #9

Good morning, all!! Happy hump day! I’m going to keep today’s What I Are Wednesday post short and sweet (like me)! This is actually everything I ate yesterday…I decided to plan for this post ahead of time for once! I feel like that’s something I need to get used to doing  – planning things ahead of time – what with a baby on the way. We’ll see how that works out I suppose. 😉  A big thank you goes out to Jenn at Peas and Crayons for hosting this fabulous link up. Enjoy my eats!

Breakfast: Two banana chocolate chip muffins with some decaf lady grey tea. Perfect and toasty warm on such a freakin’ cold day! Noms!

Snack #1: 1 hard boiled egg with two Morning Star Farms veggies sausage.

Lunch: Leftover spinach and artichoke dip (I made it for New Year’s Eve but didn’t wind up eating any because I ate so much other food!) with a handful of tortilla chips and a dozen baby carrots. I also had a few Brookside Chocolate Blueberries! (Thanks, Nicole!)

Snack #2: A Wegmans brand honey flavored blended greek yogurt. I’m a fan of Wegmans brand greek yogurt…I still prefer chobaini most of the time…buuuuuut I REALLY prefer paying 66 cents a cup instead of $1.09!

Snack #3: String cheese!! They never got old. I’m telling ya.

Dinner: John and I had a really great arm workout at the gym and I was suuuuuuuuuper hungry when I got home. I marinated two tilapia fillets in a combination of soy sauce, sesame oil, sriracha, garlic, and just a tiny bit of brown sugar while I let them defrost in a ziplock in a big pot of warm water for 5 minutes. I cooked them really quickly in a skillet with the marinade which turned into a lovely glaze. I popped a pouch of Uncle Ben’s Brown Basmatti Ready Rice in the microwave and tossed together a quick Wegmans Food You Feel Good About Asian Chopped Salad and dinner was done in twenty minutes! I covered it in green onions and more sriracha and devoured it.

Dessert: After all of that dinner I was still kind of hungry and wanted something sweet, so I melted together a tablespoon of peanut butter and a tablespoon of nutella and plopped a sliced banana on top. Ya know – plopped is not a very appetizing word now that I think about it. Oh well. It was effing delicious. Then Johnny and I watched Dads, Brooklyn-Nine-Nine, and I proceeded to fall asleep on the couch during New Girl. Oh well!!
