Enjoy the Taste of Eating Right – National Nutrition Month

G’day Mates!! Happy Tuesday!! I hope you’re all peachy-keen!! Me? I’m swell! I had a fabbbulous breakfast and I’m sippin’ on some tea (decaf earl gray, obvi), and I’ve decided it’s time to get serious with you for a moment!

I feel like some of you may know this already, particularly my fellow healthy living bloggers, but some of you may not.

March is National Nutrition Month!!

Never heard of it? Here’s a quick summary:

National Nutrition Month® is a nutrition education and information campaign sponsored annually by the Academy of Nutrition and Dietetics. The campaign is designed to focus attention on the importance of making informed food choices and developing sound eating and physical activity habits. NNM also promotes the Academy and its members to the public and the media as the most valuable and credible source of timely, scientifically based food and nutrition information. I think it’s pretty evident at this point in time that proper nutrition is something that I’m extraordinarily passionate about. I’ve decided to join in on the party again this year and share my two cents with you about this year’s theme:

Enjoy the Taste of Eating Right!

According to the Academy of Nutrition and Dietetics, consumer research has proven time and time again that taste trumps nutrition in the majority of consumer food purchases.

This seems like it’s pretty obvious to me.  Take McDonald’s, for example. According to Forbes, McDonald’s ended 2013 with “lackluster earnings” – a measly $7.09 billion, up 2% from their 2012 fourth quarter earnings. What this says to me as a health conscious consumer (not in any way, shape, or form from a business standpoint) is that even posting the nutrition facts on menus hasn’t seemed to deter consumers from eating less McDonald’s. As such, I believe it is imperative that we all realize that healthy, whole, nutrient rich foods are just as capable of being as delicious (even more delicious, actually!) as the processed junk that so many people gravitate towards.

Now please keep in mind that I am nothing if not realistic. I absolutely understand that, sometimes, it’s really hard to make a healthy choice. We’re too busy, or too tired, or too broke, or too anything…these are all factors that impact the choices we make in fueling our bodies.  It’s too often, I think, that we forget that that’s really what food is: fuel! It’s what we need to keep our bodies functioning at their optimal levels. We need food, tasty or not, to live and to thrive – regardless of how busy, tired, and broke we all are! It doesn’t need to be hard to do. If we all take a little time to educate ourselves and fuel our bodies properly with foods that we enjoy, I know that we could all live and thrive with smiles on our faces, happy taste buds, and healthy bodies.

Real Food Recipe Roundup #1 – Tilapia Tacos & Southwest Slaw

Thursday is finally here!!

I’m soooooooooooooo excited to share my very first Real Food Recipe for my Real Food Recipe Roundup. Today I’m sharing a recipe that is tried and true in my home. I hope you love this recipe as much as Johnny and I do (though he’d prefer more tacos and less slaw)! I make this over and over again because it’s so quick and easy to throw together, lite and healthy after a workout, and freaking delicious. Tilapia Tacos & Southwest Slaw

serves 2 

For the Southwest Slaw

  • 1 bag of preshredded coleslaw mix
  • 1 cup of cilantro, chopped
  • 4 green onions, chopped
  • 1 bell pepper, chopped
  • 1 red onion, diced
  • 1 can of black beans, rinsed and drained
  • 1/3 cup of Wegmans Food You Feel Good About Yogurt Southwest Ranch Salad Dressing (You need to take some shortcuts somewhere, folks. Check out the ingredients! I’m never guilty when I use this dressing!)

Combine all of the ingredients in a big bowl!! Toss well with dressing to coat!

For the Tilapia Tacos

  • 3 (4 oz) pieces of tilapia
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • The juice and zest of 1 lime
  • 2 tablespoons H2O
  • 4 corn tortillas
  • Avocado for garnish

Spray a medium skillet with some nonstick spray and place over medium high heat. Season the tilapia fillets with the spices and add to the skillet. Let the fillets cook for about 5 minutes before you try and flip them (It’s okay if they break apart a little, because you’ll flake the fish apart before serving! Am I smart or what?!) Once you’ve flipped the fish, add half of the lime juice, all of the lime zest, and the water and cover with a lid. Let cook about 3 minutes more or until the fish is cooked through. Remove from heat and flake the fish apart with a fork.

Warm your tortillas wrapped in a damp paper towel for about 30 seconds.

To server, portion out the flaked fish in the warm tortillas. Top with avocado and remaining lime juice.

Serve with salad on the side OR you can get really fancy and put some of it INSIDE of the tacos, too!! Crazy!!

My Bowl Full of Jelly & WIAW #7

Happy Wednesday, everyone!! It’s almost the weekend!!

I am particularly excited for this weekend! Friday Johnny and I will be heading into NYC to see the tree (which we haven’t done in years!) with Susan, Bill, my Papa Bear, and his lady friend.  Saturday we’ll get to catch up with an old friend I haven’t seen in quite some time and we’re meeting up with all of my extended family for dinner, which is the first time I’ll be seeing everyone since announcing that I’m pregnant, which is super exciting! And Suuuunday we’ll be meeting up with Johnny’s family and our good friend Sue and her husband Matt. We’ll also finally get to meet their little munchkin who’s already 7 months old!! EEEEE. I can’t wait to squeeze him!! It’s going to be a fabulous weekend! Do you have any great weekend plans??

Anywho, it’s What I Ate Wednesday! Check out the link up at Peas and Crayons and see what some other chicas ate today!! Here are my noms:

Breakfast: Small and simple today. Just a cup of peanut butter muligrain cheerios with nonfat milk and some chai tea.

cheeriosSnack: There were some holiday pecans up for grabs in the office kitchen today and I was the first to snag some!! I love pecans! I mixed a few halves and a handful of pomegranate  into my black cherry chobani around 10 am and it was delicious! Then, at 11, my belly started to rumble. Curse my tiny breakfast! I swear if I don’t eat a minimum of 300 calories at breakfast I’m ravenous for the rest of the day. So I munched on some triscuits and a laughing cow cheese wedge to hold me over until lunch time!chobani

Lunch: Johnny and I had lunch with our friend Nicole at Panera today! We had a Panera problem for a while, and were probbbbbbably going there like once a week. We’ve cut back to just once a month now, haha. I’m always torn with what to get, as I enjoy so many things on their menu (Big Kid Grilled Cheese, anyone?). Today I went with my standard You-Pick-Two: Thai Chicken Salad (my favorite salad on their menu) without the crispy wontons and Broccoli Cheddar soup – because it’s so snowy and cold out and it’s soooooo warm and delicious. I had a whole grain baguette on the side, but I always share a bit of it with Johnny. He’s a bread monster.

Snack: I took my vitamins after lunch but figured you guys don’t need to see those again. I also had 3 Hershey Kisses around 2:oo for a sweet little pick-me-up. Come 4:45 pm it’s serious snack time again. Today I enjoyed a pear…in the dark…because I hate the overhead lights in my office.

Today I had a pretty great arm and shoulder workout at the gym! I’m still lifting and I feel great! I also walked on the treadmill at a 15% incline for 15 minutes and I swear I sweat more doing that than I have on any run in a long time!! I’m definitely starting to feel like this baby bump is for reals now though. I can’t wait for it to be firmer…right now I’m feeling a little too much like Twas The Night Before Christmas and that I’ve got a little bowl full of jelly.  Et voila!

Dinner: Tacos for the hubs, taco salad for me! This is one of my favorite post workout meals actually! A bed of spinach topped with chopped bell pepper, black olives, onion, hot salsa, avocado, a little cheese, about 1/2 cup lean ground beef, and a taco shell!! Delicious!tacosalad

Dessert: I still have a huge bag of cookies left from our cookie bake last Saturday, so I nommed on one of the ridiculous S’Mores cookies that Susan made. Behold. They really are glorious!

WIAW #5

I’m going to keep today’s post short and sweet (like me!) because I’d love to squeeze some yoga in before bed tonight…but I couldn’t miss out on ANOTHER What I Ate Wednesday!!!! Jenn, at Peas and Crayons, hosts this awesome linkup every week!! So pop by her blog and tell her I sent ya. 🙂 Anywho – here’s what I ate TODAY!!!

Breakfast: 3/4 cup Plain, Nonfat Chobani Yogurt mixed with 1 tablespoon French Vanilla Designer Whey Protein, 1 tablespoon Homemade Honey Almond Butter, and 1/4 cup Homemade Coconut Almond Granola. Black Tea with Skim Milk and 1 Splenda.
Snack #1: 1/2 Grapefruit.
Lunch: 2 Egg White Omelet with Cherry Tomatoes, Spinach, and Swiss Cheese. 1 Wegman’s brand White Whole Wheat English Muffin with 2 teaspoons Smart Balance Lite. Looooots of water.
Snack #2: Green Tea and 1 Hershey’s Special Dark Square.
Snack #3: 12 Baby Carrots and 2 tablespoons Roasted Red Pepper Hummus.
PreWorkout Snack: Blueberry Muffin Larabar (SO EXCITED I FINALLY FOUND THEM!!)
Dinner: Quick Tilapia Tacos [Tilapia cooked with some chili powder and lime zest, 2 corn tortillas, Wegman’s Southwest Chopped Salad Kit (which, btw, if you haven’t tried it…is AMAZINGGGGGG) mixed with yellow bell peppers, red onion, avocado, and black beans.]

Weirded Out & WIAW #4

Good morning! I hope you are swell! I wish I could say that I was, I’m feeling a bit under the weather today. 🙁
I always get kind of sick when the seasons change. Hopefully this won’t be too bad. Keep your fingers crossed for me!

Feeling a little sick didn’t keep me from the gym last night, though, and I got totally creeped on! BLAH! (Has this ever happened to you?!)

The gym was much less crowded than normal last night, which made me very happy. I decided to hang out in the corner of the free weight area so if anyone wanted to use the benches (which were, literally, all empty) I wouldn’t be in their way and I could do my split squats and squat presses without interruption. Then, of course, some fairly (OK – ridiculously!) muscly man decided out of all of the empty benches the one right next to me was the most appealing. He proceeded to stretch, leaning closer and closer towards me, with a great big smile on his face. I had my headphones in and avoided eye contact, trying really hard not to be super rude (even though he was). The he decided while I was doing squat presses that some chest flys were a great idea. Had I not decided then to move on I would have gotten chest flied right in the face.

*sigh*

Gym etiquette people!  Aren’t headphone the international ” I don’t want to be bothered” symbol??

I also can’t stand when people are talking on their cell phones while walking on the treadmill!


On to What I Ate Wednesday!! Big thanks, as usual, to Jenn at Peas and Crayons for making this fun link-up possible!

Here’s what I ate yesterday! At least my dinner totally stuck with the green theme!!!

Breakfast: 1 cup Kashi Heart to Heart Warm Cinnamon Oat with 12 walnut halves, 1/2 cup mixed berries, and 1 cup skim milk. Yogi skin detox tea.
Snack: 1 slice Wegmans 98% fat free deli turkey and 1 part-skim string cheese.
Lunch: Leftover chicken parm with spaghetti squash mixed with smart balance, parm, and (maybe too much) garlic.
Snack: 1 square Wegmans dark chocolate with almonds, coffee with skim milk and 1/2 of a splenda packet (the coffee was an attempt to get rid of my garlic breath! it actually kinda worked…though gum would have been best!).
Pre-Workout Snack: 3/4 cup nonfat greek yogurt with 1 tablespoon peanut butter.
Dinner: Turkey Taco Salad! 1 1/2 cups spinach/arugula blend, 1/2 orange bell pepper, 1/2 roma tomato, 1/4 of an avocado, 2 tablespoons diced white onion, 2 tablespoons shredded taco cheese, 1/4 cup ground turkey taco meat, 1/4 cup Wegmans garlic & lime salsa, 1 1/2 crumbled hard taco shells.
Tea Time: Celestial Seasonings Peppermint Tea – my favorite before bed time. I also curled up with my Sookie Stackhouse book. The newest one comes out in May I think?? I am obsessed with True Blood and I LOVE these books!! Anyone else out there read them??
