What I Ate Wednesday #10

Hello, world!! A very happy Wednesday to you.

I’ve grown particularly fond of Wednesday’s lately, thanks (pretty much in ALL parts) to Jenn at Peas and Crayons for hosting the wonderful linkup that is What I Ate Wednesday. I really do love sitting around Wednesday nights and going through as many other blogs as I can to check out what everyone else is munching. I think it’s silly and fun to see how we’re really all the same, you know. We all get stuck in ruts. We all have a few favorite things that we eat all the time (like my string cheese!). We all seek inspiration from others at times to shake up our food routines. And we all love to eat! Taking a peek into someone else’s life for a day can be kind of exciting, don’t you think?! Here are my Wednesday eats!!

Breakfast: I had a big bowl of Special K Chocolaty Delight with Red Berries with some 1% milk, a clementine, and some decaf Lady Grey tea. I actually keep cereals like this on hand for dessert most of the time! Late at night (ya know, 9 o’clock) and when I want something sweet I’d rather have a little 100 calorie bowl of cereal and low fat milk than cookies or candy, ya know what I mean?

Snack: I had a hard-boiled egg, followed shortly by a string cheese. 

hbegg stringcheeseLunch: Very soon after my snacks I felt suuuuuper hungry. Like…I had the hungry shakes. Does anyone else ever experience those?? I stood up and was like “Whoa, man, I need to eat something right now before I fall over.” Not qutie sure what the deal was with this today, as I felt like I had eaten enough up to that point in time. I decided not to mess around, though, and I got up and made my lunch right away. I had a Morning Star Farms Spicy Black Bean Burger on a whole wheat engish muffin with 1/4 of a perfectly ripe avocado, cilantro, and butter lettuce leaves! I had some baby carrots on the side, too. I usually bring along some cheese and salsa to go with my veggie burgers, too, but I forgot them today. Oh well, it was still delicious (and I made much less of a mess eating it!)!


Snack: I ate lunch at my desk today so Johnny and I had our full lunch hour to head over to the outlets on our break. We made a pitstop at Starbucks and I snagged a decaf-short-soy-latte with cinnamon dolce sprinkles on top!! It was perfect to sip while we walked around outside, as it’s a tad bit chilly out. I can’t complain too much, though, as 45 degrees is waaaaaaaaaaay better than 2 degrees! I also had a few dried apple slices when we got back to work. (Thanks again, Nicole!)

PreGym Snack: Today I had a Carrot Cake Luna Bar. Chocolate Peppermint Stick is still my favorite of the Luna Bars (followed VERY closely by S’mores). I like the carrot cake one, but not as much as I hoped considering how much I adore carrot cake! What’s your favorite Luna Bar flavor??


Dinner: Oh man. I loved dinner tonight. So quick and tasty, which in my opinion are two adjectives that should describe every dinner ever! NO RECIPE RECIPE: I grilled some chicken on the George Forman grill that I rubbed with some store bought pesto. When I pulled them off the grill I topped each with a slice of 2% milk provolone cheese. I sauteed some cherry tomatoes in garlic with a touch more pesto to top mine and had some green beans with garlic, lemon, and olive oil on the side. Absolutely perfect dinner!!

pesto chicken and green beansThat’s all she wrote, today!! Though, I won’t lie, I’m pretty sure imma snag a piece of toast with some pb&j on it and a glass of milk when I watch Top Chef later!! Perhaps I’ll update the post later with a photo. We’ll see! Anyone else out there a Top Chef fan?? I’m routing for Shirley this season…or for Louis to come back and win it all from last chance kitchen!! His smile …. he’s so adorable … and I’d eat the heck out of his food!!!

What I Ate Wednesday #9

Good morning, all!! Happy hump day! I’m going to keep today’s What I Are Wednesday post short and sweet (like me)! This is actually everything I ate yesterday…I decided to plan for this post ahead of time for once! I feel like that’s something I need to get used to doing  – planning things ahead of time – what with a baby on the way. We’ll see how that works out I suppose. 😉  A big thank you goes out to Jenn at Peas and Crayons for hosting this fabulous link up. Enjoy my eats!

Breakfast: Two banana chocolate chip muffins with some decaf lady grey tea. Perfect and toasty warm on such a freakin’ cold day! Noms!


Snack #1: 1 hard boiled egg with two Morning Star Farms veggies sausage.


Lunch: Leftover spinach and artichoke dip (I made it for New Year’s Eve but didn’t wind up eating any because I ate so much other food!) with a handful of tortilla chips and a dozen baby carrots. I also had a few Brookside Chocolate Blueberries! (Thanks, Nicole!)


Snack #2: A Wegmans brand honey flavored blended greek yogurt. I’m a fan of Wegmans brand greek yogurt…I still prefer chobaini most of the time…buuuuuut I REALLY prefer paying 66 cents a cup instead of $1.09!


Snack #3: String cheese!! They never got old. I’m telling ya.


Dinner: John and I had a really great arm workout at the gym and I was suuuuuuuuuper hungry when I got home. I marinated two tilapia fillets in a combination of soy sauce, sesame oil, sriracha, garlic, and just a tiny bit of brown sugar while I let them defrost in a ziplock in a big pot of warm water for 5 minutes. I cooked them really quickly in a skillet with the marinade which turned into a lovely glaze. I popped a pouch of Uncle Ben’s Brown Basmatti Ready Rice in the microwave and tossed together a quick Wegmans Food You Feel Good About Asian Chopped Salad and dinner was done in twenty minutes! I covered it in green onions and more sriracha and devoured it.


Dessert: After all of that dinner I was still kind of hungry and wanted something sweet, so I melted together a tablespoon of peanut butter and a tablespoon of nutella and plopped a sliced banana on top. Ya know – plopped is not a very appetizing word now that I think about it. Oh well. It was effing delicious. Then Johnny and I watched Dads, Brooklyn-Nine-Nine, and I proceeded to fall asleep on the couch during New Girl. Oh well!!




What was your favorite thing you ate this week so far?! I loved my dinner last night…I’ll definitely be making my tilapia that way again, soon!

Happy Spring & WIAW #3

Hey ya’ll!

Happy First Day of Spring!!

Does it feel spring timey where you are? It’s a bit chilly here if I do say so myself. I can’t wait for it to warm up a bit.  Then Johnny and I can resume our lunchtime walks! I haaaaaaaaaate sitting all day, and once the nice weather resumes I won’t have to (as much, *sigh*)!

Sheesh, I’ve been so busy this week I haven’t posted since last Wednesday! I promise I’ll have some new recipes for you soon!

How do Black Bean Mango Stacks, Balsamic Chicken and White Bean Pasta, and Morning Glory Muffins sound to you?

Good?! Good!!

Because that’s what you’ll be getting from me soon! 🙂

Anywho, did you enjoy your St. Patty’s Day?

I had a great time in NJ over the weekend with some awesomeeeeeeee family and friends. I even had my first ever green beer this year!! I didn’t’ really start drinking beer until fairly recently so I was excited to finally partake! Check out this awful picture of it! (It was a tiny guy – the way I like my beer – In small, adorably packaged quantities!)

I indulged at bit over the weekend, though it definitely could have been worse. Only one stop at a diner isn’t all that bad all things considered! Haha. More specifically, I indulged in what I can safely call my favorite breakfast sandwich of all time … taylor ham, egg, and cheese!!! (Anyone out there with me on this?! Jersey!!) Oh gosh. It’s so glorious. I’m happy I don’t live in NJ anymore so I don’t down one of these babies every day.
















After such an awesome and indulgent weekend, how about we move on to some healthy eats?! This WIAW, hosted by Jenn at Peas and Crayons, is actually what I ate yesterday. I’ve stuck pretty much to the same routine all week so far, just changing up my dinner. Hope you enjoy!!



Breakfast: Homemade whole wheat morning glory muffin with plain 0% Greek yogurt mixed with lime zest, mango, and toasted unsweetened coconut
Snack: String cheese!!!
Lunch: Half a pouch of Campbell s Go Soup Spicy Chorizo & Pulled Chicken with Black Beans (with a little extra frozen corn and shredded chicken I had on hand mixed in). It’s got a tiny kick to it, and it’s super tasty. These soups are becoming a new staple for me when I don’t have time to make my lunch!
Snack: A baby handful of YumNuts Chocolate Cashews. I can’t get enough of these guys!
ANOTHER Snack: Hey look! Finally some green (packaging). I usually don’t be pre cut fruits or veggies but a pack of 8 of these little apple pouches was less than $2. I effing love Wegmans.
Dinner: I threw together dinner super fast last night so that I could get to my yoga class on time. I had some pasta I cooked over the weekend in the fridge ready and waiting for me so I just sauteed some chicken thighs in garlic and olive oil, tossed in some bell peppers, spinach, and lemon zest, and added the pasta. Fin!
After Dinner (Not Photographed): I always love to have a cup of tea at night. Last night was decaf English Breakfast Tea with some skim milke and half of a splenda.  I also had a mini morning glory muffin (because I made big guys and mini guys) while Johnny and I watched the latest (HILARIOUS) New Girl.

What I Ate Wednesday (WIAW #1)

Well we made it to Wednesday!

Happy Hump Day (if you’re into that sort of thing)!


Out of my 10 mile goal this week I’m at 4.5! Not too shabby considering I took the night off yesterday. I ran 3 miles straight tonight in just under 35 minutes. That’s another personal best for me – seeing as I’ve never ran for that long nonstop before! And I didn’t even feel that tired after!! I’m tellin’ ya it’s my legs that start to feel it more than my lungs, which I suppose is a good thing.  I’m totally going to crush this.

Anywho, I’m super excited to participate for the first time everrrrrrr in What I Ate Wednesday (WIAW for short!). Hosted by Jenn at Peas and Crayons, a blog I’ve recently discovered and love, it’s essentially a chance to take a peek at what I (and about 200 other participants should you so desire) ate today (or, ya know, whenever whomever feels like taking pictures of their food). I’ve always felt kinda silly taking pictures of everything I eat, and I’m so happy to have found a community online that does the same thing!!

March’s WIAW theme is Going Green for March!! So you’ll be seeing lots of green – veggies and herbs and fruits and mugs (I have a big green Lilo & Stitch mug that I love so very much. It makes it’s debut appearance below!!!).

Breakfast: 3 egg whites scrambled up in my big green mug with Wegmans brand “Don’t be Piggy” veggie sausage crumbles, red bell pepper, red onion, a sprinkle of grated parm, 1/2 of a whole wheat english muffin topped with some Smart Balance and a cup of Yogi Skin Detox Tea. Also, a big water bottle full of lemon water. Yum. This was the first of the Wegmans new veggie meat substitues I’ve tried and I thought it was great! I can’t wait to try their “Don’t be Chicken Nuggets.

Snack: String cheese, not pictured, because I got halfway through it before I thought about photographing it and decided, ya’ll know what string cheese looks like anyway.

Lunch: Campbell’s Go-Soup Coconut Curry with Chicken and Shitake Mushrooms. Have you tried any of these soups yet? I LOVE them!! This one and the Chicken & Quinoa with Poblano Chiles are my two faves. Even though today wasn’t as snowy as expected it was flippen cold. Perfect day for a big mug of soup!

Little Snack: Sometimes, ya just gotta have some chocolate! Ferrero Rocher – seriously – who doesn’t love these?? Johnny got me a pack for Valentine’s Day that I’m savoring. I had it with some black tea with one splenda and skim milk (my favorite way to drink black tea!).

Pre-Workout Snack: Larabar’s new Über Roasted Nut Roll. It was pretty good – not my favorite Larabar (which actually goes to their Lemon Bar – though the Blueberry Muffin, Carrot Cake, and Cappuccino flavors are all still eluding me *sigh*) but certainly not bad either! It tastes like nuts. Ha. I’m not sure what else I was expecting. It did totally hold me over through my run until dinner though!

Dinner: I threw together some quick chicken burritos for dinner once we got home from the gym. Poached and shredded some chicken thighs and threw it in a pan with sauteed bell peppers, onion, black beans, and cooked brown rice. Added some salsa and a chopped up chipotle pepper and served it inside of a whole wheat tortilla topped with more salsa, pickled jalapenos, lettuce, and cheddar. Delightful!

 I’m not gonna lie, I’m probably going to have a glass of chocolate milk as soon as I’m done writing this. I hope you enjoyed this post! I promised you a shrimp recipe on Monday and you’ll get it I swear…just not tonight.
