WIAW #17 – The Saturday Edition!

Actually, it’s Tuesday night as I write this… because I do what I want. 😀

I mentioned last week that one of these days I would share my weekend eats with you. Well, you’re in luck, today’s that day!! This right here is my Saturday. I start off pretty strong, but I go out with a bang. Haha. You shall see.

On to the nommies!!

Breakfast: I love breakfast on the weekends!! I love being able to take a little bit of extra time to throw something special together, relax in my pjs, and just enjoy it. During the week, I eat breakfast at my desk at work while going through emails, so it’s really a nice to just sit and eat and do nothing else. This Saturday I threw together one of my favorite oatmeal concoctions. I’m sure you’ll be shocked to hear the ingredient: 1 cup almond milk, 1/2 cup rolled oats, 1 banana, 1 tablespoon chia seeds, 1 tablespoon peanut butter, and a sprinkle of chocolate chips!! I make this whipped banana style, slicing it really thin and mixing it right into the oats. I also mix in most of the peanut butter while I cook the oats, too. Then I top it off with a few reserved banana slices, some more peanut butters (because you can never have too much peanut butter) and chocolate chips. It’s decadent and amazing and I love it so, so, so much. In fact I just ate dinner (aka stuffed my face with mac & cheese because the hubby said “It’s Fat Tuesday, make something awesome” ) and now all I want to do is whip up a big pot of them. *sigh*

banana, pb, chia oatsI got up bright and early (which means about 7:30 on a weekend) on Saturday to make sure I had time to enjoy my oatmeal prior to my yoga class. I’m telling you, man, the more I yoga the more I love it and the more I know that I genuinely want to become an instructor after my baby is born. I’m absolutely in the love with the studio I’ve been going to and the instructors there are wonderful!! I took an hour and fifteen minute vinyassa to get my Saturday going and helped myself after to some Blackberry Sage tea for the road!! It’s perfection in a cup!!

tea for the roadLunch: We popped by the mall after my yoga class so I could get re-sized for a bra at Victoria’s Secret. #pregnancyproblems. Whaaaat a process. Really, the size I should be doesn’t exist. And they didn’t have what I wanted in the store. So I just got my “size” from a spectacularly helpful employee and went home and ordered everything online. C’est la vie. I was supppper hungry by the time I got home and showered. I had a leftover fajita burrito (Ya know, kinda like a burrito with no rice…plus all the stuff in fajitias. I make mine with chicken, black beans, peppers, onions, chipotles, and orange juice – among some other spices) but it was mostly beans so I was happy. I wrapped it up in a whole wheat tortilla with some melty cheese, topped it with salsa, and dug in fork and knife style. I also had some baby carrots for good measure, but I wound up sharing a few with Quincy.

Snack: My MIL and I had to snag some groceries for Sunday before the “big storm” hit. (Big storm, my fanny!! I wanted another snow day…I got like 3 inches. At least it’s almost Spring. Sigh. That’s what I keep telling myself anyway.) On the way out I treated us to some coffee – decaf Hazelnut for this gal, please and thank you!! When we got home I also had what has become one of my new favorite snack obsessions – pistachios and blueberry flavored craisins (thanks a lot, Susan! lolz)!

Dinner: Saturday night the family and I attended a fundraiser dinner. It was the 7th Annual Angels for Alyssa Spaghetti Dinner. This is the 3rd year we’ve attended and we always have a great time! One of my mother-in-law’s dear friends from work is the Aunt of Miss Alyssa, a 15 year old girl who was prenatally diagnosed with a rare condition called methylmalonic acidemia (MMA). MMA prevents her body from metabolizing protein. It’s a very touching story, and we’re always more than happy to support Alyssa and her family as they work with their doctor to find a cure! Over the last 7 years they’ve raised over a half a million dollars for MMA research!! The fundraiser is quite a money maker – there is a live auction which is always exciting, a silent auction, and basket raffles!! This year Johnny and I didn’t win anything, but my MIL won a basket filled with Yankee Candles and a $50 visa gift card!! You get a TON of food, too. A big plate of spaghetti with meat sauce, bread and butter, salad, and a ridiculous array of dessert.

Dessert: It’s always a hard time picking out dessert when there are sooooo many options. I wound up going with a plate of cookies – chocolate chip and peanut butter!! I also had a piece of chocolate peanut butter fudge, two fun sized Reese’s…and another peanut butter cookie Melinda brought me later!!

We had a great time dancing a bit, too! There’s a live band that plays throughout the night and they just play classic rock. I loooooved how the dance floor was filled with people all night! That’s the sign of a good time! It’s pretty fantastic to have such fun while supporting such a wonderful cause!! I know we’ll be back next year.

Diiiiiidn’t I tell you that my weekend eats aren’t as spectacular as my weekday ones. Now you’ve seen proof!! If chocolate and peanut butter weren’t so perfect together I might have an easier time – but who cares really? One of my favorite philosophies of eating that I’ve seen floating around the interwebs essentially says that one bad day of eating won’t make you fat…just like one day of healthy eating won’t make you skinny!! Moderation is my motto. And sometimes, baby just wants a peanut butter cookie … or 3. 😀

Do you tend to eat more healthy or less healthy on the weekends?

Real Food Recipe Roundup #2 – Shrimp Scampi

It’s Thursday, ya’ll!! That means it’s thiiiiiiiiiiiiiiiiiissssssss close to the weekend!! I’m particularly excited for a pretty chill weekend. I’ve got yoga on Saturday morning and I’m meeting some of my favorite gals for coffee on Sunday. Otherwise, I plan to read, clean, cook, and eat….and that’s about it! Does that make me lame? I don’t really care! It brings me joy…just like shrimp do!! (I am a fantastic transitioner – obvi!)

I was cravvvvvvvvvvvving shrimp for weeks. I still wish I could eat my weight in them. But alas, they cost monies. These particular shrimp were free, though, thanks to Kyle and Melinda!! (Woot! You guys rock!!) So when ya got shrimp, ya make shrimp scampi!

This recipe is sooooooooooooooo simple. The ingredient list is pretty short, too, which makes it even better in my book! And they’re all just real, tasty, albeit not the most healthy, but if you’d like you can go ahead and substitute whole grain pasta if you’d like. My hubby doesn’t love it, so this time around I stuck to plain old pasta. I also use a combination of real butter and olive oil here…the butter is important so I wouldn’t recommend omitting it completely, but if you’re more comfortable using more oil than butter I’d say go for it! Here’s the recipe!!

Twenty-Something & Starving

  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb spaghetti
  • 6 cloves of garlic, minced
  • 1 lemon, zested and juiced
  • 2 tablespoons unsalted butter
  • 2 teaspoons olive oil
  • 1/2 cup dry white wine
  • Salt & Pepper to taste
  • Parsley, for garnish

Bring a large, salted pot of water to boil. Prepare the spaghetti to package directions.

Meanwhile, melt the two tablespoons of butter in a large skillet over medium heat. Add the olive oil and garlic and saute for about 4 minutes until fragrant.

Add the shrimp and cook for 3 to 4 minutes on each side until pink. Add the wine, lemon zest, and lemon juice and cook for another 5 minutes until the sauce reduces just a bit. Season with salt and pepper to your liking and toss in the parsley.

Serve immediately over spaghetti!

Saturday Sorta Spaghetti Carbonara

IT’S SATURDAY!!!!!!

Saturday is the best day of the week if you ask me! I know that during Football season many folks may disagree… buuuut I don’t care… because I love Saturday!! You can use it to do whatever you want. You can sleep as long (or as little) as you like. You can stay up however late you want (ya know…eleven…if you’re me) You can use the whole day to do whatever you please knowing that if you don’t get everything done you want to, there’s always Sunday!

Take today for example. Today was a particularly wonderful Saturday (and it’s not over yet!) After an evening of snuggling with the hubs and watching some season four of Archer I woke up fabulously rested right at 8:00am. I peeped out the window and I saw that it snowed last night. It was just a tiny dusting, but it was perfectly untouched and still flurrying a bit when I looked outside and it was a beautiful morning. I made myself one of my favorite  weekend breakfasts – a big bowl of banana oats with peanut butter and chocolate chips! While my oats cooked away on the stove top I woke up the hubs with a cup of coffee and made him his weekend scrambled eggs and toast. We enjoyed breakfast together before heading out to conquer the day! What is your favorite weekend breakfast?

We hit the gym at 10:30 and I enjoyed the launch of the newest BodyFlow class. We haven’t been members at this new gym for very long, but the I’m really loving this class! The two BodyFlow instructors are both fabulous!! I let them know I was pregnant and I just love that they both remembered and happily present me with the few modifications I need during class. (Mostly the stuff where you’re flat on your belly. I pretty much officially cannot do any of those poses any more. If I lift my arms and legs I feel like a weeble wobble!)

Johnny and I just ran a bunch of errands after the gym. We grabbed some lunch at Chipotle (RANDOM ASIDE: I really enjoy the food at Chipotle, and I love that’s it convenient and fairly healthy as well, but I really hate how it’s almost never hot!! Today I got a brown rice bowl with black beans, pinto beans, grilled veggies, and corn salsa and it was hardly warm at all! Does anyone else have this problem?), I finallllllllllly changed my name over on our bank account (1 year and 4 months after we got married), Johnny got a haircut and a new pair of glasses, we snagged a few things at Target (Like Divergent!! For only $8.00! I finished reading Orange is the New Black and decided it was about time I hopped onto the next big book train) and scoped out some baby gear before we start our registry, I bought some Turbie Twists at Bed Beth and Beyond because I love them and haven’t had them in forever, and finally we came home. (P.S. If you actually read all of that…HIGH FIVE! You rock!! I hadn’t intended for this to be such a marathon post. I hope the prospect of bacon kept you chugging along!) Time for dinner!!!

Now I’m not sure about you, but I’ve always been pretty iffy about Spaghetti Carbonara. Not iffy in the way most people are. I’ve never doubted that it would be delicious. Bacon, eggs, pasta, cheese. What is there NOT to like about it, right?? It’s not the technique that’s kept me away, though I know it’s  intimidating to some. I love a good kitchen challenge.

Restaurants are what make this dish iffy for me. I can honestly say that I have never ordered it off of a restaurant menu and I probably never will. So often it’s described as spaghetti in a “Parmesan cream sauce” with bacon or pancetta and either peas or tomatoes or…well…you get the idea.

Ex-squeeze me? Baking Powder? Parmesan cream sauce…isn’t that Alfredo sauce?? You are not serving me Spaghetti Carbonara. You are serving me Spaghetti Alfredo with bacon. If you like Alfredo sauce then, by all means, dig in and enjoy. Me? I’ll pass thank you. I decided it was time to make myself a delicious plate of Spaghetti Carbonara. One that I can trust and one that I can devour!

My version of Spaghetti Carbonara…is it “traditional” Spaghetti Carbonara.

Nope.

Purists believe that true, authentic Spaghetti Carbonara is just spaghetti with guanciale, eggs, and Parmesan or Pecorino cheese.

Most folks aren’t able to get their hands on cured pork jowls. Bacon – that’s realistic. Pancetta is delicious and perfectly acceptable, too. Authentic Carbonara wouldn’t have any veggies in it (mine does) because it was a peasant dish and they used what little they had to prepare it. I had bell peppers and spinach and I deem it necessary to never not have veggies with my dinner.

So no, this is NOT authentic Spaghetti Carbonara. But it’s certainly closer to traditional than any Carbonara with cream sauce you’ll ever come across!! And it’s effing delicious. So please, enjoy. 😀

Sorta Spaghetti Carbonara

  • 1/2 box spaghetti
  • 4 strips of bacon, diced
  • 2 whole eggs
  • 1/2 cup grated Parmesan cheese + more to taste
  • 1/2 of a small red onion, diced
  • 2 garlic cloves, diced
  • 1 red bell pepper, diced
  • 1 1/2 cups baby spinach, chopped
  • 1/4 cup white wine
  • 2 teaspoons garlic powder
  • Black pepper to taste

Start by bringing a large pot of salted water to a boil. Cook the pasta to package directions until just shy of al dente. (While the pasta is cooking, scoop out about 1 cup of the pasta water and reserve it for later.)

Meanwhile, cook the diced bacon in a large skillet over medium high heat. When the bacon is crisp, remove it from the pan and allow it to drain on some paper towels.

Remove all but about 1/2 tablespoon of the bacon fat from the pan. Add the onions, garlic, and red bell pepper and let saute until soft, about 5 minutes. Add the wine and the spinach to the pan and cook until the spinach is wilted. Add the cooked spaghetti to the pan, adding some reserved pasta water if it seems dry, and remove the pan from the heat. (This is the most important part!! This is the difference between creamy delicious spaghetti and scrambled eggs!!)

In a small bowl, whisk together the 2 eggs, Parmesan cheese, garlic powder, and black pepper until very well combined. Add the egg mixture to the pan, tossing the pasta together constantly with a pair of tongs, until a sauce begins to form, adding more pasta water as necessary if it seems too thick.

Add the reserved bacon to the pan. Serve immediately topped with more Parmesan cheese and black pepper if you so desire…which you should… because they’re delicious.

Happy New Year!!

Holy cow, dudes!

It’s 2014!!

Can you believe it?! 2013 was a pretty awesome year for me, but 2014 is definitely going to be the biggest one yet!! (My belly will be the biggest to date, anyway. 🙂 )

We didn’t get too crazy this year… and I’m totally good with it. Johnny and I just hung out at Melinda and Kyle’s. Check out these party animals. 😀

This photo was taken at 10:30 last night. Dont worry, though, they woke up just in time to watch the ball drop and go to bed. Hehehe.

After grabbing some food and drink at Troegs, we went back to their place, ate some more, and then literally just sat on the couch from 8:30 to midnight watching New Years Rockin’ Eve. I only dozed off once or twice during some commercial breaks. Did anyone else feel super old watching some of past performances?? Rhianna looked amazing and classy (not something I’m used to seeing these days) performing Umbrella in 2007…7 years ago already. It’s hard to belive that in April, Johnny and I will have been together for 7 years! Sheesh! Time goes by so fast!! Though no matter how much time goes by, I’m not sure Johnny and I will ever be capable of taking a nice picture of the both of us at the same time. Heh. We’re just goofs.

That’s actually my New Year’s Resolution this year : I resolve to take care of myself and, in turn, baby (who’s heart is thumping away happily in my belly) to the best of my ability until baby is born and then to be the best Mommy I can be!

To start the New Year off right, I had to partake in What I Ate Wednesday! Today wasn’t too shabby. (I thought about taking picture of my food yesterday – taylor ham, egg, and cheese on a garlic bagel – root beer – fondue – poutine – pizza – and my weight in buffalo chicken dip. Buuuuuuut the photographic evidence would make me feel shame. Delicious, cheesy, carb laden shame!) It was wonderful to have the day off work. We got to sleep in and I made a super fun breakfast for everyone. Enjoy my day of eats!

Breakfast: I made some chocolate chip pancakes and bacon for everyone. I also enjoyed a clementine, which I can’t get enough of lately, and some 1% milk. I actually wound up having another pancake after I took this picture. It was all delightful.

Lunch: Johnny and I grabbed a lite lunch at Wegmans today since we had to pick up some groceries. I just had a small cup of their chicken noodle soup, some saltines, and a glass of water.

Tea Time: I had a lovely cup of decaf Lady Grey when we got home from grocery shopping. I was sad this morning when I thought I had brought my tea with me to Melinda and Kyle’s so I could have some with breakfast and it was nowhere to be found. I actually forgot it on the kitchen counter. *sigh* Pregnancy Brain.ladygrey

Snack Time: I enjoyed a S’more Luna Bar (thank, Susan ;P) while digging into my new copy of “Orange is the New Black; My Year In A Women’s Prison. ” I swear, I always wind up reading anything a show or movie I like is based off of. I loved the Netflix series so much that when I saw this on sale at Target last weekend I had to snag it!

lunabarDinner: Johnny helped me make dinner tonight! It was so much fun!! Definitely a great way to start the year off right! We made meatballs together – he was responsible for meatball construction while I chopped up all of the ingredients to add to them. I made a little spaghetti to go with it, but the meatballs were the star of the show. I also filled my plate halfway with a salad of butter lettuce, cherry tomatoes, red onion, carrots, red bell pepper, black olives, and a tiny bit of Italian dressing.

An evening in Italy – sorta

The sensational aromas of garlic, tomato sauce and olive oil are still permeating in the air of my little apartment. Tonight’s meal was like a little trip back to Italy – sorta. (I say back because in the summer of 2008 I was privileged enough to take a two week Mediterranean cruise to Italy, Spain, France, Croatia, and Tunisia. It was an absolutely amazing trip! But lets get back to dinner, shall we…) My intention for tonight’s meal was a simple, traditional baked ziti. Yum. To my dismay, when I checked the pantry, all I had were farfalle (bowties) and spaghetti. LIGHTBULB! Spaghetti Pie!

I think one time I watched Giada De Laurentiis make a spaghetti frittata once, maybe that was my inspiration? Maybe I was just hungry. Either way, I decided to serve it was a lovely italian side dish – broccoli rabe. Continue reading
