WIAW #22 – The South Carolina/Road Trip Edition

Hey dudes!! A very happy Wednesday to you!! This Wednesday is particularly happy for me because I only have 1 work day left this week and tomorrow I get to see Bill, Susan, annnd MY MOMMA!!! Woot!!! I’m so very excited for this weekend!!!!

Imma keep my intro pretty short this week, because, well, the post itself is prettttty lengthy. You’re a real trooper if you actually red the whole thing…but here it goes!! I present to you my road trip and eats from South Carolina. As always, shout out to Jenn at Peas and Crayons for hosting!!!

Breakfast on the Road: We’ve road tripped with Johnny’s parents before and it’s pretty safe to say that we are guaranteed to stop at McDonalds several times for coffee/breakfast/etc. Although I’m pretty okay eating a McDonald’s oatmeal or evvvvvvvvven an Egg McMuffin on a rare occasion I decided not to mess around this trip. I planned ahead to make sure Johnny and I had some substantial and nutritous munchies for breakfast and snacks while on this trip!! I will note, however, that I always get a kids chocolate milk at McDonalds. Yes. There is quite a bit of sugar in it. Buuuuuuuuuuut it’s delicious and went to well with what I brought…that is… a huge container of peanut butter (which, I assure you, I took all four days to eat) that I dipped a perfect banana in (because my perfect banana has lots of spots and is super ripe without a speck of green) and a banana chocolate chip protein muffin. Also, McDonalds seems to always oblige when I ask for a coffee cup filled with hot water so I could brew my own decaf green tea in the car. Perfect!!! I also munched on an apple cinnamon rice cake when I was feeling snacky, probably around 11!

Lunch: I suggested we stop at Cracker Barrel for lunch on Friday. I knew everyone (that is, Johnny and my in-laws) loves their coffee, plus it was a Friday so we needed to have some meatless options, which I knew they have. Annnnnnnnnd I love looking around the gift shop! I was delighted when I saw their  “Wholesome Fixin’s” menu, which provided calorie counts and lighter options. I was super excited to see their Egg n’ Cheese Sliders – eggs over hard with some shredded colby cheese and tomato slices on lil’ whole wheat sandwich thins (it also comes with mayo, which I cannot for the life of me understand!!) and a wee cup of fresh fruit. We were already in North Carolina at this point in time, having hit the road at 3:00am, so it was getting hot out, too, so this was the peeerrfect lite lunch for me to enjoy!!

So, funny story. I’ve mentioned before in a few of my bumpdates that I swear by my Bella Band. I have yet to purchase a pair of maternity pants and the Bella Band helps me keep all of my pants up! Well, I wore it with my work pants on Thursday, went to the gym, and wound up throwing it in the laundry hamper bundled with my black pants instead of packing it. I’m thankful I remembered while we were driving!! Soooo we made a pitstop at the local Target so I could pick up another one (now I have one in black and in white, which is nice because a lot of my shirts are lighter colors and you could see the black right through it). Obviously, since we stopped at target, I had to grab an iced-decaf-tall-nonfat-latte-in-a-grande-cup-with-extra-ice-and-1-splenda. And obviously I had no choice but to take a photo of myself drinking it. Hehe.

So at this point. We arrived!! We said our hellos to the fam!! Lots of baby talk. Lots of baseball talk (as all 5 of Johnny’s cousins are boys…who play baseball). Lots of lounging. I took a nice long shower (I don’t know about you, but after a day of sitting in the warm car I LOVE taking a nice, COOL shower and just standing there until I feel like moving. Johnny thinks I’m nuts. But cool showers rock!) and got settled in and had a nice dinner that included salmon, baked potatoes, corn, and green beans. We hung out on the covered patio for most of the night chatting and catching up before we hit the hay pretty early since we had such a long day!!

Saturday was the Flower Festival. It’s just a big ol’ street fair with lots of vendors and LOTS of people. This year Johnny and I splurged just a wee bit on some fancy schmancy oil and vinegar from a local vendor, The Crescent Olive. We sampled a whole bunch (like Chipotle Oil and Pineapple Vinegar) and they were all fantastic, but we wound up buying a bottle of Tuscan Herb Olive Oil and Fig Balsamic Vinegar. (FIG BALSAMIC IS LIFE CHANGINGGGGGG!) We also wound up snagging a pint of local strawberries that looked soooo tasty I couldn’t say no to them, and an avocado so I could whip up a tasty salad for lunch. Leave it to me to go to a street fair and buy nothing but food…that I can cook when I get home. Lol.

Lunch: We were pretty hungry when we got back from the Flower Fest as it was suuuuuuuuuuuuper hot and humid outside. I made an AMAZING salad for lunch though. I took some organic mixed greens, the local strawberries, some avocado, and some of the previous evening’s leftover salmon and drizzled it with a little bit of the herb oil and fig vinegar. My goodness. I loved everything about this salad. Sure…I would have loved a gyro or something like that from the street fair…but this salad was so worth waiting until I got home to eat!!

After lunch, we took a nice long walk around the neighborhood (we really did just spend the majority of our trip walking…or eating). There is a huuuuge treehouse at the end of the block with some swings and such. Swinging is my happy place. Seriously. It just makes me so happy!!

I was actually pretty pooped after our walk – my hands also blew up like balloons. I thought maybe it was a pregnancy thing until Johnny and his dad said the same thing happens to them in the humidity. Dang it was unpleasant. I wound up taking a nice nap before dinner.

Dinner: We ate dinner at a place called The Icehouse. Johnny’s Aunt Amy and Uncle Kevin are big fans, so all 15 of us trucked on over for dinner. I started off with a “caprese salad”. I use the quotes because, although it was tasty, it was really just a mixed green salad with a few tomatoes and some mozzarella tossed in. But it’s totally okay – because my meal was perfection. Shrimp. And. Grits. Actually – their version of Shrimp and Grits may be my favorite to date!! It’s not that I don’t like super creamy grits, it’s that I don’t typically like the ratio of grits to everything else (too much grits, not enough everything else. spoken like a true northerner, I’m sure!). This was so delicious!! It was a “fried grit cake” so it was a bit crispy on the outside and nice and creamy on the inside, topped with shrimp, andoullie sausage, mushrooms, green onions, and some cheese. I ate every bite. Johnny loved his meal too, and who wouldn’t?? He totes carbed out and got friend chicken with mashed potatoes and mac and cheese. OoOoOo and Johnny’s Aunt Maria got cornbread that came with this spicy honey that I could bathe in. Seriously. The fried chicken IN the spicy honey…oh heavens…ridiculous.

Dessert: After a dinner like that I didn’t want anything for dessert at the restaurant. Grandma Yoder is a BIG fan of having a nice mexican or irish coffee after dinner, though, so she had a pretty steady supply of Ready Whip at home. At about 9 when we were all just chatting on the patio again I sliced up a few more strawberries and added a healthy does of whipped cream…because I was on vacation…duh…and YUM!

Sunday was spent mostly walking around Charleston. There’s a fun market there we went to, we walked along the water front, annnnnnnnnnnd I got Nutella gelato. Weee!!!!

On the Road Home: It was poooouring rain during the drive home, which ya know, as a passenger isn’t really a big deal,  we all really just wanted to get home. We made a quick pitstop for lunch at Wawa and grabbed it to go. I was surprised to see a Wawa that far south, but whateves…I was good with it. I’m still funny with meat sometimes, lately, especialllllly the processed icky kind that you’ll most likely get at a Wawa or what-have-you…so I opted for a cheese quesadilla with some pico and avocado. I also snagged an almond cocoloco chobani flip because they’re deliciousssssss!!

Our Last Pitstop: It was about 3:00 on Monday when we made our last pitstop at a Dunkin Donuts for coffee and to pee (which, btw, wasn’t as bad as I anticipated. woot!). It was so dreary out and smelled so coffeelicious in there that I couldn’t not snag a decaf toasted almond coffee with some milk and sugar. Noms!!

Dinner(After scouring the pantry): I really didn’t feel like getting take out Monday night after all of the food we ate out over the weekend, so I looked around to see what I could whip up. What did I find? A box of pasta,  a can of tomato paste, some bacon in the freezer, half a bag of spinach, and parmesan cheese.I was totally good with this. So cozy and homey after being on the road. We ended our evening snuggling with our little Quincy and watching the Game of Thrones premier!!!!!

The Last WIAW of Winter!!

Hehehehe. Gosh I just love, Stitch! He’s my fave! He reminds me of my husband and my dog if they were combined into a single being…take that however you want it. Ha!

Anywho, I’m so happy it’s finally Wednesday!!! It’s been a pretty productive week for me so far, which is probably why this is my first post of the week!! Oops!! I had a loooovely weekend in New Jersey, a doctor’s appointment on Monday. (I took my glucose test and they took some of my blood and I DID NOT pass out. That’s two times in a row now where I’ve gotten my blood taken without passing out. I may very well be an adult just yet.), and had a pretty solid workout on Tuesday night. In fact, I’ll discuss that a bit more in a few because this week I’m sharing my TUESDAY eats!

Breakfast: Breakfast for me yesterday was the same Berry Ginger Chia Smoothie I linked to a few weeks ago. It’s so effing delicious I didn’t care how cold it was outside. I enjoyed it with a big old mug of decaf green tea!

Snack: My first snack of the day was an Apple Walnut Flax Muffin (recipe tomorrow!!) and I had it around ten. It’s soooo perfectly moist and nutty and cinnamony! I was hungry again around 11, so I nommed on an apple, served on my belly which seems to be getting bigger every day! I will be 28 weeks pregnant tomorrow and that is so crazy!!! I’ve even started to notice my belly wiggling around like jello when the little munchkin in there does her kung-fu! It makes me giggle. Every single time. Even if it’s inappropriate. Like in a meeting at work. Oops! If I don’t make eye contact hopefully no one will notice my giant goofy smile!

Lunch: For lunch yesterday I heated 3oz of shredded chicken in the microwave until it was nice and warm and then I mixed it up with about 1/3 of an avocado and a squeeze of lime juice. I smushed it all in a toasted whole wheat pita with some thin sliced red onion and crisp romaine lettuce. I’m usually all about spinach, but I really wanted the texture of the lettuce in this! Ya gotta change things up a little here and there, right? Right!

Snack: So thanks in large part to some fabulous strawberries I had over the weekend (that Susan so kindly provided me) – they are all I want to eat lately. I pretty much invented the best snack ever yesterday with some strawberries I had. I spread them with a cinnamon cream cheese laughing cow cheese wedge, and then rolled them in crushed pistachios. Sweet. Creamy. Salty. Perfect. Seriously. It’s going to be an issue if and when I run out of these ingredients.

More Snacks: Well my tummy started rumbling agaiiiin around 4, so I had some roasted garlic hummus with about 8 baby carrots and 3 triscuits. I brought more with me, but after munching on all of that I decided that my belly was happy and I tucked the rest away for another day.

Dinner: I had a pretty decent workout last night, focusing primarily on my biceps and back…but I threw in some random chest presses. Oh well. I also did a 20 minute walking interval on the treadmill. Sigh. I am really looking forward to being able to run again this summer! I wanted to make sure I got my protein on when I got home, but also didn’t feel like making a big elaborate dinner. Lately, when I’m doing my meal planning, I always have an “empty” weeknight slot where I just make eggs and toast. Last night was that night. Johnny gets 2 whole eggs plus 2 egg whites, 2 slices of american cheese, and 2 slices of whole wheat toast with some smart balance with omerga 3s. I made myself an omlette with 1 whole egg and 2 egg whites whipped up with some skim milk with red onion, portobello mushroom, spinach, and 2% mozzarella cheese. I had it with 2 slices of smart balancy toast, too. It was exactly what I needed!!

Dessert: Of course my life isn’t complete without dessert these days!I’m really hoping to break this habit once baby is born and I’m less hungry all the time. Of all the desserts I could have though, I don’t feel bad about this one…particularly because sometimes I eat it for breakfast!! It’s just 1/2 cup of plain nonfat greek yogurt with 1 (okay 1 HEAPING) tablespoon of peanut butter with some chocolate chips on top!! I love everything about it!! And obviously I’m feeding my muscles with more protein…and my baby with chocolate chips. Nom!!

WIAW #17 – The Saturday Edition!

Actually, it’s Tuesday night as I write this… because I do what I want. 😀

I mentioned last week that one of these days I would share my weekend eats with you. Well, you’re in luck, today’s that day!! This right here is my Saturday. I start off pretty strong, but I go out with a bang. Haha. You shall see.

Big thanks to Jenn at Peas and Crayons, as per ush (pronounced “yoozsh”…ya know, like, the abbreviated revision of “usual”…how the heck are you supposed to spell that?!) for hosting this fabulouuus link-up par-tay.

On to the nommies!!

Breakfast: I love breakfast on the weekends!! I love being able to take a little bit of extra time to throw something special together, relax in my pjs, and just enjoy it. During the week, I eat breakfast at my desk at work while going through emails, so it’s really a nice to just sit and eat and do nothing else. This Saturday I threw together one of my favorite oatmeal concoctions. I’m sure you’ll be shocked to hear the ingredient: 1 cup almond milk, 1/2 cup rolled oats, 1 banana, 1 tablespoon chia seeds, 1 tablespoon peanut butter, and a sprinkle of chocolate chips!! I make this whipped banana style, slicing it really thin and mixing it right into the oats. I also mix in most of the peanut butter while I cook the oats, too. Then I top it off with a few reserved banana slices, some more peanut butters (because you can never have too much peanut butter) and chocolate chips. It’s decadent and amazing and I love it so, so, so much. In fact I just ate dinner (aka stuffed my face with mac & cheese because the hubby said “It’s Fat Tuesday, make something awesome” ) and now all I want to do is whip up a big pot of them. *sigh*

banana, pb, chia oatsI got up bright and early (which means about 7:30 on a weekend) on Saturday to make sure I had time to enjoy my oatmeal prior to my yoga class. I’m telling you, man, the more I yoga the more I love it and the more I know that I genuinely want to become an instructor after my baby is born. I’m absolutely in the love with the studio I’ve been going to and the instructors there are wonderful!! I took an hour and fifteen minute vinyassa to get my Saturday going and helped myself after to some Blackberry Sage tea for the road!! It’s perfection in a cup!!

tea for the roadLunch: We popped by the mall after my yoga class so I could get re-sized for a bra at Victoria’s Secret. #pregnancyproblems. Whaaaat a process. Really, the size I should be doesn’t exist. And they didn’t have what I wanted in the store. So I just got my “size” from a spectacularly helpful employee and went home and ordered everything online. C’est la vie. I was supppper hungry by the time I got home and showered. I had a leftover fajita burrito (Ya know, kinda like a burrito with no rice…plus all the stuff in fajitias. I make mine with chicken, black beans, peppers, onions, chipotles, and orange juice – among some other spices) but it was mostly beans so I was happy. I wrapped it up in a whole wheat tortilla with some melty cheese, topped it with salsa, and dug in fork and knife style. I also had some baby carrots for good measure, but I wound up sharing a few with Quincy.

Snack: My MIL and I had to snag some groceries for Sunday before the “big storm” hit. (Big storm, my fanny!! I wanted another snow day…I got like 3 inches. At least it’s almost Spring. Sigh. That’s what I keep telling myself anyway.) On the way out I treated us to some coffee – decaf Hazelnut for this gal, please and thank you!! When we got home I also had what has become one of my new favorite snack obsessions – pistachios and blueberry flavored craisins (thanks a lot, Susan! lolz)!

Dinner: Saturday night the family and I attended a fundraiser dinner. It was the 7th Annual Angels for Alyssa Spaghetti Dinner. This is the 3rd year we’ve attended and we always have a great time! One of my mother-in-law’s dear friends from work is the Aunt of Miss Alyssa, a 15 year old girl who was prenatally diagnosed with a rare condition called methylmalonic acidemia (MMA). MMA prevents her body from metabolizing protein. It’s a very touching story, and we’re always more than happy to support Alyssa and her family as they work with their doctor to find a cure! Over the last 7 years they’ve raised over a half a million dollars for MMA research!! The fundraiser is quite a money maker – there is a live auction which is always exciting, a silent auction, and basket raffles!! This year Johnny and I didn’t win anything, but my MIL won a basket filled with Yankee Candles and a $50 visa gift card!! You get a TON of food, too. A big plate of spaghetti with meat sauce, bread and butter, salad, and a ridiculous array of dessert.

Dessert: It’s always a hard time picking out dessert when there are sooooo many options. I wound up going with a plate of cookies – chocolate chip and peanut butter!! I also had a piece of chocolate peanut butter fudge, two fun sized Reese’s…and another peanut butter cookie Melinda brought me later!!

We had a great time dancing a bit, too! There’s a live band that plays throughout the night and they just play classic rock. I loooooved how the dance floor was filled with people all night! That’s the sign of a good time! It’s pretty fantastic to have such fun while supporting such a wonderful cause!! I know we’ll be back next year.

Diiiiiidn’t I tell you that my weekend eats aren’t as spectacular as my weekday ones. Now you’ve seen proof!! If chocolate and peanut butter weren’t so perfect together I might have an easier time – but who cares really? One of my favorite philosophies of eating that I’ve seen floating around the interwebs essentially says that one bad day of eating won’t make you fat…just like one day of healthy eating won’t make you skinny!! Moderation is my motto. And sometimes, baby just wants a peanut butter cookie … or 3. 😀

WIAW #16

Ooopsie Daisy! It looks like I skipped over my WIAW #15 and did two #14s instead. Pregnancy brain. Oh wells. Onto #16!! As per usual (lately, anyway) here are my eats for Monday. I’m actually super pleased with my diet this week, I’ve been eating like a champion and definitely loving my veggies this month! I’m thinking perhaps I’ll share some weekend eats on Wednesday soon, just for funsies. I tend to eat a bit less healthy and more like a real person (like pizza!!) on the weekends. We shall see. Either way, big thanks to Jenn at Peas and Crayons for the fab link up!! Breakfast: I mentioned in my post on Monday that Central PA is in desperate need of a Trader Joes, annnnnnd this Multigrain Triple Berry with Flax and Chia Instant Hot Cereal has a lot to do with it. I snagged this box on Saturday and I don’t know what to do…because it’s amazing and I want to keep eating it… but I don’t want to run out, either!! I had one pack for breakfast on Sunday and it wasn’t enough…(then I proceeded to have a bowl of cantaloupe, 2 slices of leftover Margarita pizza, 4 brownie bites, and a glass of milk. Yeah, I should definitly give you guys a peek into my weekends, haha!)  two packs on Monday did the trick!!! Oh my gosh, it’s so delicious and berry-y. Enjoyed with decaf earl gray – obvi.

Snack: I snacked happy Monday. Literalllyyyyyyyy. Oh gosh, look at me, I’m cheesin’ over here…ahhhh I did it again. Food puns for days!!!

Lunch: Lunch was pretty simple on Monday. I had a pita spread with a bit of roasted garlic hummus (obsessed!), a Morning Star Farms Mediterranean Chickpea Burger, some feta, romaine, and bell peppers. green lunch

Snack: Snack number two on Monday was is one of my faves! Since it’s been warm enough in my office I’m able to enjoy some cold snacks more often. I had some plain nonfat greek yogurt mixed with a tablespoon of peanut butter…and 1/2 a banana. I, personally, prefer my bananas suuuuuper ripe. This one was perfect … except for the big bruise it had about halfway down. About an hour later I was still a weeeeee bit hungry, so I nommed on two of my banana protein oat bites while I finished up my shopping list/meal plan for the week!

Dinner:  We had dinner at Wegmans on Monday night, which we often do when we pick up groceries right after work instead of on Sunday. I love that Johnny and I can both get whatever we want!! He had a meatball sub and a Victory IPA. I enjoyed some sesame green beans (my FAVORITE option from the Hot Asian food bar at Wegmans), some broccoli and mushroom stir fry (which is new and was also super tasty!), and a California Summer Roll!! Although I still miss my tuna and salmon rolls, I’ll be pretty darn happy munching on these whenever a sushi craving hits until June.

wegmans dinner Dessert: We’ll call this dessert, because it happened after dinner time, but I’m pretty darn pleased with my whole Monday of eating! My “dessert” was a fancy glass filled with Vanilla Almond Milk (which I only treat myself to when I have a coupon because I’m trying to be more fiscally responsible) and a handful of Blueberry flavored Craisins. Delish!!

almond milk!So folks, what’s new with you?! I had a doctor’s appointment today and little miss Emma’s heart is thump-thump-thumping away while she tumbles around in my belly. Also, the doctor totally buttered me up today and told me I look AMAZING and that if he didn’t see my belly he’d have no idea I was pregnant!! Thanks for making my day, doc.

What I Ate Wednesday #13

Greetings and a very happy Hump Day to you all!!

By a show of hands, how many of you are snowed in today??

Heh – perhaps a show of hands wasn’t the best approach. Silly internets.

Either way. This snow and ice is ridiculous! As long as they don’t close the gym today I’m good. Keep your fingers crossed for me!! Come on Central PA and get your act together! 

Oh well, at least I prepared my post early again like a champion!! This week’s What I Ate Wednesday post, brought to you (as always) by the delightful Jenn at Peas and Crayons are actually my Monday eats.  This particular Monday I had quite a few leftovers from our Super Bowl celebration, which were alllllll delicious!

On to the nommies!!

Breakfast: It’s so funny that I don’t think I’ve ever posted this breakfast for a WIAW, but I swear I eat this like 3 times a week. Especially in the cold weather months!! What we have here is 1 banana mashed up with about 1 tablespoon of skim milk mixed together with 1/2 cup of rolled oats, 1/2 scoop of vanilla almond designer whey protein, 1 teaspoon of cinnamon, and 20 semi sweet chocolate chips. I microwave it for 2 minutes and 30 seconds, stop it to mush down anything that may have started to puff up over the side of the bowl, and microwave it for another 3 minutes. It comes out with a mug-cakey like texture…and it’s absolutely delicious! I top it with a tablespoon of peanut butter while it’s still hot so the peanut butter melts all over it. It’s perfect. And it seriously keeps even pregnant me full until lunch time.  I enjoyed it with an 8oz glass of orange juice and my decaf earl gray tea.

Lunch: Please excuse the blurry photo, but I was preeeeeeeettttyy hungry once I sat down with my lunch and I was all *snaps picture* DEVOUR!! This sandwich was essentially what I made for dinner for our Super Bowl shenanigans.  I took an eye round and popped it in the crock pot all day with some garlic powder, onion powder, thyme, salt, pepper, Worcestershire sauce, and beef broth.  I shredded it all up and placed it on a toasted roll brushed with a tiny bit of garlic oil, provolone cheese, and spinach (that spinach was just for me…because I love it…and a vegetable was necessary). I also had a tiny baby pear that I’ve had sitting around for the last week that’s been getting super ripe and a string cheese pretty soon after lunch.

Snacks:  I was just a munch machine on Monday. Heh. Does anyone else just love a good alliteration? Anywho, throughout the afternoon I munched on some more Super Bowl leftover – Sabra Chiptole Hummus (which has officially turned into my new favorite thing and I will have a hard time not eating it every waking moment of every day) with some baby carrots, broccoli, and cauliflower. I also picked up some Popcorners. Anyone try these guys yet? They are like PopChips…but made with corn rather than potatoes. They taste kind of like a tortilla chip and popcorn made delicious babies. They are awesome in this hummus!!! A little later in the afternoon I snagged a greek yogurt with some walnuts mixed in. I knew we were getting groceries and probably wouldn’t have dinner until a little later, so I wanted to make sure I wouldn’t get the hungries while I was shopping. Though Johnny did. So he got a fun pack of peppers, cheddar, and multiseed crackers that he shared with me once we got to Wegmans.

hummusandsuchyogurtDinner: So, in an effort to try and have us BOTH eat less meat and, also, to help reduce our grocery bill a bit, Johnny and I have agreed to having Meatless Monday dinners. We also take Monday night off from the gym, so I do what I can to keep our dinners on the healthier side on Monday – but maybe have something we wouldn’t necessarily enjoy after a tough workout. This one right here is one of my favorite quickies to make. I saute about 4 cloves or garlic in a little olive oil and toss in about 4 giant handfuls of spinach and let it wilt down, adding a littttttle splash of white wine to let it wilt faster. I add strained, cooked pasta to it and a can of rinsed canellini beans. I season it with a healthy dose of garlic powder and toss in about 1/3 cup of diced, roasted red peppers. Mix in a little parmesan cheese, another handful of spinach (I like to have some super wilted and some with a bit more texture), lemon zest, and a touch more olive and dinner is served in 15 minutes! I love this dish so much!

white bean and spinach pastaDessert: Well, technically I don’t know if you’d call this dessert, but I did! I  have the same problem that so many folks do in that I really like to end my day with something sweet. Tonight it was just a big glass of chocolate milk! Skim milk and some Nesquick syrup. I snuggled up with Johnny and Q on the couch in my green fuzzy socks to watch Almost Human and How I Met Your Mother before bed time!
