WIAW #16

Ooopsie Daisy! It looks like I skipped over my WIAW #15 and did two #14s instead. Pregnancy brain. Oh wells. Onto #16!! As per usual (lately, anyway) here are my eats for Monday. I’m actually super pleased with my diet this week, I’ve been eating like a champion and definitely loving my veggies this month! I’m thinking perhaps I’ll share some weekend eats on Wednesday soon, just for funsies. I tend to eat a bit less healthy and more like a real person (like pizza!!) on the weekends. We shall see. Either way, big thanks to Jenn at Peas and Crayons for the fab link up!! Breakfast: I mentioned in my post on Monday that Central PA is in desperate need of a Trader Joes, annnnnnd this Multigrain Triple Berry with Flax and Chia Instant Hot Cereal has a lot to do with it. I snagged this box on Saturday and I don’t know what to do…because it’s amazing and I want to keep eating it… but I don’t want to run out, either!! I had one pack for breakfast on Sunday and it wasn’t enough…(then I proceeded to have a bowl of cantaloupe, 2 slices of leftover Margarita pizza, 4 brownie bites, and a glass of milk. Yeah, I should definitly give you guys a peek into my weekends, haha!)  two packs on Monday did the trick!!! Oh my gosh, it’s so delicious and berry-y. Enjoyed with decaf earl gray – obvi.

Snack: I snacked happy Monday. Literalllyyyyyyyy. Oh gosh, look at me, I’m cheesin’ over here…ahhhh I did it again. Food puns for days!!!

Lunch: Lunch was pretty simple on Monday. I had a pita spread with a bit of roasted garlic hummus (obsessed!), a Morning Star Farms Mediterranean Chickpea Burger, some feta, romaine, and bell peppers. green lunch

Snack: Snack number two on Monday was is one of my faves! Since it’s been warm enough in my office I’m able to enjoy some cold snacks more often. I had some plain nonfat greek yogurt mixed with a tablespoon of peanut butter…and 1/2 a banana. I, personally, prefer my bananas suuuuuper ripe. This one was perfect … except for the big bruise it had about halfway down. About an hour later I was still a weeeeee bit hungry, so I nommed on two of my banana protein oat bites while I finished up my shopping list/meal plan for the week!

Dinner:  We had dinner at Wegmans on Monday night, which we often do when we pick up groceries right after work instead of on Sunday. I love that Johnny and I can both get whatever we want!! He had a meatball sub and a Victory IPA. I enjoyed some sesame green beans (my FAVORITE option from the Hot Asian food bar at Wegmans), some broccoli and mushroom stir fry (which is new and was also super tasty!), and a California Summer Roll!! Although I still miss my tuna and salmon rolls, I’ll be pretty darn happy munching on these whenever a sushi craving hits until June.

wegmans dinner Dessert: We’ll call this dessert, because it happened after dinner time, but I’m pretty darn pleased with my whole Monday of eating! My “dessert” was a fancy glass filled with Vanilla Almond Milk (which I only treat myself to when I have a coupon because I’m trying to be more fiscally responsible) and a handful of Blueberry flavored Craisins. Delish!!

almond milk!So folks, what’s new with you?! I had a doctor’s appointment today and little miss Emma’s heart is thump-thump-thumping away while she tumbles around in my belly. Also, the doctor totally buttered me up today and told me I look AMAZING and that if he didn’t see my belly he’d have no idea I was pregnant!! Thanks for making my day, doc.

What I Ate Wednesday #11

I’m so happy it’s Wednesday!!!! Why??

BECAUSE TOMORROW IS THURSDAY AND I GET MY ULTRASOUND AND I GET TO FIND OUT IF BABY YODER IS A BOY OR A GIRLL!!!!!!!! SQUEEEEEEEEE!!!!!!!

(Okay, I get it in an envelope tomorrow, will give it to my fabulous baker who is making us red velvet cupcakes with a pink or blue center and I get to find out with some of my most closest friends on Saturday if baby is a boy or a girl. But either way…I’M SO EXCITED!!!!!!!!!!!)

I’m also excited because I prepared my eleventh (really, eleven already, wowzers!) What I Ate Wednesday post yesterday. Technically it’s What I Ate Tuesday, but ya know, tomato, tomatoe.  A big thank you to Jenn at Peas and Crayons as usual for hosting this fabulous link up!

On to the foods!

Breakfast: Yum and a half! I had two pieces of my leftover quiche! I didn’t take a picture, because my office was dark and ugly yesterday morning because it was early and snowing out. But here is a pretty one I took when I made the quiche! I also had some decaf earl gray because that’s what I do. slice o'quiche

Snack:  Snack time hit me right at 10 yesterday. I had a S’More Luna Bar and some more decaf earl gray in my Maurader’s Map Mug. Then I snapped a selfie because I felt like it…and obviously you guys can’t get enough of me on here, right? 😀

lunabarmoiLunch: First thing is first – naan bread is delicious. It is not, however, a suitable replacement for pita bread. Wegmans was toooooootally sold out of any whole wheat pita bread when Johnny and I got out groceries on Monday. *womp womp* “It’s okay, Jen,” I thought, “I’ll just get this whole wheat naan instead!” Welp, my lunch yesterday was tasty – buuuuuuuuut  I had to eat it with a fork and knife. It was some whole wheat naan that I toasted and spread with a little of this fancy new avocado hummus I bought on sale. (Avocado hummus tastes like regular hummus, in case you were wondering). I had a Morning Star Farms Mediterranean Chickpea Burger with some feta, spinach, roasted peppers, and red onion. Delish. Not as good as the Spicy Black Bean Burger that I love so much in my opinion, but I’m much more of a “spicy” gal than I am “Mediterranean”.

hummus veggieburgerSnacks: Soon after lunch I had myself and adorable lil’ clementine and two Hershey kisses that have been sitting in my desk drawer for waaay too long and tasted like I may have kept a really ripe banana in there with them at some point in time. Oh well. Chocolate fix achieved. (P.S. Like my new pink planner?! I picked it up over the weekend. I really find that I remember things better when I write them all down. I’ve been using it to log my food and workout summaries, too! Let’s hope I keep it up!)

darlingclementinekissesMore Snacks: Boy am I a hungry monster lately. I picked up some of the new simply balanced sunflower and flax crisps at Target over the weekend. They’re pretty tasty. I love the crunch!! I think they’re a bit too sweet for crackers, though. I had 5 of them to munch with 5 baby slices of cheddar cheese and about 1/2 of a suuuuper ripe pear. (It was so ripe I could only eat half of it…because the other half was mush. Oh well!) I also had another mug’o decaf earl gray. I can’t help it. I love it so much. It was also super cold in my office!snacktime

Dinner: Well my dinner plans went in a few different directions yesterday. I had planned on stir fry because it’s healthy and quick and we go to the gym on Tuesday and aren’t usually home until about 7ish. I was sooooo sad to find out that the gym decided to close at 1:30 because of the snow. It was supposed to be leg day. *sigh* I love leg day! So instead…I made mac & cheese…because that’s definitely not a post-workout meal! And stir fry is out of the question for the rest of the week now, too, because I accidentally knocked the bottle of sesame sauce off the shelf and it shattered all over the floor whilst making dinner. Oh life. Cleaning it up was a family affair. I felt less bad eating mac & cheese after mopping the entire kitchen floor after my hubby and MIL picked up all of the glass pieces and sopped up the sauce. I also made myself a quick salad with butter lettuce, spinach, cherry tomatoes, carrots, peppers, red onion, and a few croutons to eat before I sat down with my mac. I filled myself up with salad first so I didn’t eat half a pound of mac & cheese. I think that makes sense, right? It was probably closer to 1/3 of a pound instead. But ya know – progress!  Also, I’m growing a human sooooooooo imma get my mac & cheese on if I wanna.  Quincy reaaaaaallly wanted to share. I’m afraid not this time, Q!

What I Ate Wednesday #10

Hello, world!! A very happy Wednesday to you.

I’ve grown particularly fond of Wednesday’s lately, thanks (pretty much in ALL parts) to Jenn at Peas and Crayons for hosting the wonderful linkup that is What I Ate Wednesday. I really do love sitting around Wednesday nights and going through as many other blogs as I can to check out what everyone else is munching. I think it’s silly and fun to see how we’re really all the same, you know. We all get stuck in ruts. We all have a few favorite things that we eat all the time (like my string cheese!). We all seek inspiration from others at times to shake up our food routines. And we all love to eat! Taking a peek into someone else’s life for a day can be kind of exciting, don’t you think?! Here are my Wednesday eats!!

Breakfast: I had a big bowl of Special K Chocolaty Delight with Red Berries with some 1% milk, a clementine, and some decaf Lady Grey tea. I actually keep cereals like this on hand for dessert most of the time! Late at night (ya know, 9 o’clock) and when I want something sweet I’d rather have a little 100 calorie bowl of cereal and low fat milk than cookies or candy, ya know what I mean?

Snack: I had a hard-boiled egg, followed shortly by a string cheese. 

hbegg stringcheeseLunch: Very soon after my snacks I felt suuuuuper hungry. Like…I had the hungry shakes. Does anyone else ever experience those?? I stood up and was like “Whoa, man, I need to eat something right now before I fall over.” Not qutie sure what the deal was with this today, as I felt like I had eaten enough up to that point in time. I decided not to mess around, though, and I got up and made my lunch right away. I had a Morning Star Farms Spicy Black Bean Burger on a whole wheat engish muffin with 1/4 of a perfectly ripe avocado, cilantro, and butter lettuce leaves! I had some baby carrots on the side, too. I usually bring along some cheese and salsa to go with my veggie burgers, too, but I forgot them today. Oh well, it was still delicious (and I made much less of a mess eating it!)!

Snack: I ate lunch at my desk today so Johnny and I had our full lunch hour to head over to the outlets on our break. We made a pitstop at Starbucks and I snagged a decaf-short-soy-latte with cinnamon dolce sprinkles on top!! It was perfect to sip while we walked around outside, as it’s a tad bit chilly out. I can’t complain too much, though, as 45 degrees is waaaaaaaaaaay better than 2 degrees! I also had a few dried apple slices when we got back to work. (Thanks again, Nicole!)

PreGym Snack: Today I had a Carrot Cake Luna Bar. Chocolate Peppermint Stick is still my favorite of the Luna Bars (followed VERY closely by S’mores). I like the carrot cake one, but not as much as I hoped considering how much I adore carrot cake! What’s your favorite Luna Bar flavor??

Dinner: Oh man. I loved dinner tonight. So quick and tasty, which in my opinion are two adjectives that should describe every dinner ever! NO RECIPE RECIPE: I grilled some chicken on the George Forman grill that I rubbed with some store bought pesto. When I pulled them off the grill I topped each with a slice of 2% milk provolone cheese. I sauteed some cherry tomatoes in garlic with a touch more pesto to top mine and had some green beans with garlic, lemon, and olive oil on the side. Absolutely perfect dinner!!

pesto chicken and green beansThat’s all she wrote, today!! Though, I won’t lie, I’m pretty sure imma snag a piece of toast with some pb&j on it and a glass of milk when I watch Top Chef later!! Perhaps I’ll update the post later with a photo. We’ll see! Anyone else out there a Top Chef fan?? I’m routing for Shirley this season…or for Louis to come back and win it all from last chance kitchen!! His smile …. he’s so adorable … and I’d eat the heck out of his food!!!

What I Ate Wednesday #9

Good morning, all!! Happy hump day! I’m going to keep today’s What I Are Wednesday post short and sweet (like me)! This is actually everything I ate yesterday…I decided to plan for this post ahead of time for once! I feel like that’s something I need to get used to doing  – planning things ahead of time – what with a baby on the way. We’ll see how that works out I suppose. 😉  A big thank you goes out to Jenn at Peas and Crayons for hosting this fabulous link up. Enjoy my eats!

Breakfast: Two banana chocolate chip muffins with some decaf lady grey tea. Perfect and toasty warm on such a freakin’ cold day! Noms!

Snack #1: 1 hard boiled egg with two Morning Star Farms veggies sausage.

Lunch: Leftover spinach and artichoke dip (I made it for New Year’s Eve but didn’t wind up eating any because I ate so much other food!) with a handful of tortilla chips and a dozen baby carrots. I also had a few Brookside Chocolate Blueberries! (Thanks, Nicole!)

Snack #2: A Wegmans brand honey flavored blended greek yogurt. I’m a fan of Wegmans brand greek yogurt…I still prefer chobaini most of the time…buuuuuut I REALLY prefer paying 66 cents a cup instead of $1.09!

Snack #3: String cheese!! They never got old. I’m telling ya.

Dinner: John and I had a really great arm workout at the gym and I was suuuuuuuuuper hungry when I got home. I marinated two tilapia fillets in a combination of soy sauce, sesame oil, sriracha, garlic, and just a tiny bit of brown sugar while I let them defrost in a ziplock in a big pot of warm water for 5 minutes. I cooked them really quickly in a skillet with the marinade which turned into a lovely glaze. I popped a pouch of Uncle Ben’s Brown Basmatti Ready Rice in the microwave and tossed together a quick Wegmans Food You Feel Good About Asian Chopped Salad and dinner was done in twenty minutes! I covered it in green onions and more sriracha and devoured it.

Dessert: After all of that dinner I was still kind of hungry and wanted something sweet, so I melted together a tablespoon of peanut butter and a tablespoon of nutella and plopped a sliced banana on top. Ya know – plopped is not a very appetizing word now that I think about it. Oh well. It was effing delicious. Then Johnny and I watched Dads, Brooklyn-Nine-Nine, and I proceeded to fall asleep on the couch during New Girl. Oh well!!

Baby, It’s Cold Outside! WIAW #6

Now that I’m back on the blog scene I though it would only be appropriate to rejoin super fun What I Ate Wednesday link up – brought to you by Peas and Crayons! (Check out Jenn’s blog if you get the chance! I’m still meaning to make her sweet potato nachos! They look baaaannnggggiiinnnnn’!) Also, it’s freeeeezing outside. So I deemed it necessary to title my post as such. I’ve also been listening to the She & Him version of Baby, It’s Cold Outside – which I adore – on my “Christmas Tree Jams” playlist on Grooveshark. It’s a pretty fabulous playlist, and includes a festive combination of  the Muppets, Peanuts, Michael Bublé, Trans Siberian Orchestra, Frank Sinatra, Ella Fitzgerald, Bing Crosby,  annnnnd Justin Beiber. #noshame

Anywho – here’s my Wednesday of food!


Breakfast: Two Wegman’s brand organic flax waffles topped with two tablespoons of PB&CO Mighty Maple and a sliced banana. Also, “hot chocolate” made with warm nonfat milk and 2 teaspoons of Hershey’s special dark syrup. I’ve been drinking SO MUCH of this lately. It’s helping with my milk craving AND any desire I have for sweets. I was super full after this breakfast I didn’t snack at all until lunch time!

Lunch: Now I understand that visually, this is not the most appealing photo I’ve ever taken. Buuuuut….my lunch was effing delicious. I’m obsessed with Morning Star Farm’s Veggie Corn Dogs. Corn dogs were one of my more favorite carnival treats as a kid (that, and chicken fries, and waffles with ice cream) and these babies taste just as delicious as I remember for only 150 calories plus 8 grams of protein and only 2.5 grams of fat. With it I had some baby carrots and some leftover quinoa & cheese from last night. Holy goodness, I could (and plan to) eat that quinoa & cheese every day forever. QUICK NO RECIPE-RECIPE: Cook 1.5 cups quinoa in 1.5 cups chicken stock. When it’s just about done add 2. oz fat free cream cheese, 4 oz. shredded extra sharp cheddar cheese, and a sprinkle of garlic powder. Stir it up until it’s melted then try not to devour the entire pot.

Snack: One lil’ Blackberry Blended chobani yogurt. These are so delicious…and adorable! I’m a sucker for anything mini!

Boy do I love this yogurt! I was also all smiles because it wasn’t -10 degrees in my office today. Hooray!

goofyVitamins: Next up are my prenatal vitamins!!! I have these guys every day after lunch. I have a history of getting sick after taking vitamins, so I’m so thrilled I’ve found ones that don’t make me ill. These are just OTC store Target brand prenatals, and they are delicious! They taste like a less sour version of sour patch kids and they are just delightful.

Snack: Today’s #elf4health challenge was to pack a healthy snack for you and a friend! I pack my hubby’s lunch on the daily, and our snacks are typically quite healthy. Today I packed some peanut butter chocolate chip larabars…which in my personal opinion are the best larabars everrrrrrrr!

snackDinner: Dinner was a little random tonight. I went for a hair cut right after work and my husband decided he didn’t want to wait for me to get home for dinner. C’est la vie!! I was going to make us some simple tilapia with a salad, but since it was just me I figured I’d do something quick and fun! I took garlic, olive oil, spinach, and cherry tomatoes, sauteed them until the spinach wilted, and added two French Onion Laughing Cow cheese wedges and let them melt into the spinach. I spread that on top of a nice hearty piece of wheat toast and throw two eggs (cooked over-hard) on top. Simple, qiuck, delicious. I also whipped up a quick little pomegranete spritzer – just Pom juice and some Polar Bear Pomegranate Seltzer – just for funsies!

Now, I plan to snuggle up on the couch with my baby Quincy watching My Grandmother’s Ravioli with Mo Rocca on the Cooking Channel. I just need to stay awake for Top Chef tonight!!

I’m not going to lie – I’ll probably munch on a handful of my dark chocolate and pumpkin seed trail mix I picked up at the trail mix bar at Wegmans last week, but you guys don’t need to see that!! Happy Hump Day!
