The Last WIAW of Winter!!

stitch say hi!
Hehehehe. Gosh I just love, Stitch! He’s my fave! He reminds me of my husband and my dog if they were combined into a single being…take that however you want it. Ha!

Anywho, I’m so happy it’s finally Wednesday!!! It’s been a pretty productive week for me so far, which is probably why this is my first post of the week!! Oops!! I had a loooovely weekend in New Jersey, a doctor’s appointment on Monday. (I took my glucose test and they took some of my blood and I DID NOT pass out. That’s two times in a row now where I’ve gotten my blood taken without passing out. I may very well be an adult just yet.), and had a pretty solid workout on Tuesday night. In fact, I’ll discuss that a bit more in a few because this week I’m sharing my TUESDAY eats!

Thanks to Jenn at Peas and Crayons for the link up party!! Here’s to the last What I Ate Wednesday of Winter (because it’s officially Spring tomorrow no matter what the weather man says)!!! HUZZAH!!!

Breakfast: Breakfast for me yesterday was the same Berry Ginger Chia Smoothie I linked to a few weeks ago. It’s so effing delicious I didn’t care how cold it was outside. I enjoyed it with a big old mug of decaf green tea!
smoothie to go

Snack: My first snack of the day was an Apple Walnut Flax Muffin (recipe tomorrow!!) and I had it around ten. It’s soooo perfectly moist and nutty and cinnamony! I was hungry again around 11, so I nommed on an apple, served on my belly which seems to be getting bigger every day! I will be 28 weeks pregnant tomorrow and that is so crazy!!! I’ve even started to notice my belly wiggling around like jello when the little munchkin in there does her kung-fu! It makes me giggle. Every single time. Even if it’s inappropriate. Like in a meeting at work. Oops! If I don’t make eye contact hopefully no one will notice my giant goofy smile!

Lunch: For lunch yesterday I heated 3oz of shredded chicken in the microwave until it was nice and warm and then I mixed it up with about 1/3 of an avocado and a squeeze of lime juice. I smushed it all in a toasted whole wheat pita with some thin sliced red onion and crisp romaine lettuce. I’m usually all about spinach, but I really wanted the texture of the lettuce in this! Ya gotta change things up a little here and there, right? Right!

Snack: So thanks in large part to some fabulous strawberries I had over the weekend (that Susan so kindly provided me) – they are all I want to eat lately. I pretty much invented the best snack ever yesterday with some strawberries I had. I spread them with a cinnamon cream cheese laughing cow cheese wedge, and then rolled them in crushed pistachios. Sweet. Creamy. Salty. Perfect. Seriously. It’s going to be an issue if and when I run out of these ingredients.

More Snacks: Well my tummy started rumbling agaiiiin around 4, so I had some roasted garlic hummus with about 8 baby carrots and 3 triscuits. I brought more with me, but after munching on all of that I decided that my belly was happy and I tucked the rest away for another day.

Dinner: I had a pretty decent workout last night, focusing primarily on my biceps and back…but I threw in some random chest presses. Oh well. I also did a 20 minute walking interval on the treadmill. Sigh. I am really looking forward to being able to run again this summer! I wanted to make sure I got my protein on when I got home, but also didn’t feel like making a big elaborate dinner. Lately, when I’m doing my meal planning, I always have an “empty” weeknight slot where I just make eggs and toast. Last night was that night. Johnny gets 2 whole eggs plus 2 egg whites, 2 slices of american cheese, and 2 slices of whole wheat toast with some smart balance with omerga 3s. I made myself an omlette with 1 whole egg and 2 egg whites whipped up with some skim milk with red onion, portobello mushroom, spinach, and 2% mozzarella cheese. I had it with 2 slices of smart balancy toast, too. It was exactly what I needed!!

Dessert: Of course my life isn’t complete without dessert these days!I’m really hoping to break this habit once baby is born and I’m less hungry all the time. Of all the desserts I could have though, I don’t feel bad about this one…particularly because sometimes I eat it for breakfast!! It’s just 1/2 cup of plain nonfat greek yogurt with 1 (okay 1 HEAPING) tablespoon of peanut butter with some chocolate chips on top!! I love everything about it!! And obviously I’m feeding my muscles with more protein…and my baby with chocolate chips. Nom!!

So dudes..what’s the BEST thing you ate this week so far? I’m still reveling in my snack invention glory.

What’s your favorite omelet filling?

I’m going to keep today’s post short and sweet (like me!) because I’d love to squeeze some yoga in before bed tonight…but I couldn’t miss out on ANOTHER What I Ate Wednesday!!!!  Well…Happy What I Ate Wednesday!!!!!!

I Think Today is a Say-Something-Hat-Day

Hey there!

How’s it going?

Swell I hope.

I’m peachy-keen, jelly bean. (Thanks for asking.)

I woke up this morning and I decided right away that today  was a say-something-hat-day. (P.S. If you know what I’m referencing do let me know, because if we’re not friends IRL we are now. 🙂 )

Only really when I say “say-something-hat” I mean “do-something-fun-and-different”.

What do I mean by that, exactly?

I’ve decided to do share with you all a day in the life of me. I’ve seen tons of other blogs where they literally capture everything they do and eat in a day…everyday. I always though it was kind of a silly practice. Who really cares what I do in a day? What makes me so important that I think readers will actually take more than a glance  before they skedaddle off to another blog with more interesting content. Then, I thought…I read those posts! I don’t know what is about it but I genuinely find it interesting to see how other people eat, exercise, and spend their time. Maybe I’m just bananas, but there has to be something to it if so many successful blogs out there do the same thing and keep on keepin on – ya know what I mean?  So let’s get started, shall we!

6:00 am: My alarm goes off. I showered right before bed last night so I’m pleased as punch that I have extra time to get myself together before I leave for work today. I’m always greeted by the same thing every morning –  y baby, Q, snuggled up by my hip, waiting for me to feed him. I feed him and give him some water. I do four half sun salutations while Q’s eating to get my blood flowing and have a bottle of water while I get dressed.

Quincy in the wee hours of the morning waiting for breakfast.

6:20 am: I feel like a genius because last night I put everything but the chicken together for Skinnytaste’s Chicken Crock Pot Taco Chili. It’s all just sitting in a big bowl in my refrigerator. This morning all I needed to do was throw the chicken breasts in the crock pot, dump in the bowl of ingredients, and turn on the power. This is good news, because I did not get our food together  for the day last night, which I typically do the night before. It takes me a few, but I get our stuff together in no time.

Dinner ready to go in the crock pot

Breakfast, lunch, and snacks for John and I. Ready to be packed up for work.

6:45 am: I wake up the hubs who gets in the shower and does his morning thang. I finish tidying up the kitchen before leaving for work. I love when I have time to clean in the morning so that I can come home to a nice clean kitchen! Don’t you?!

Lovely, clean kitchen!

7:15 am: We’re on the road. I’m really pleased it’s not raining today and that the sun is out. I feel like it’s been too long since we’ve had a sunny day.

The morning commute. Not too bad today!
Loving the sunshine as we arrive at work.

7:50 am: We typically arrive at work pretty early, which I’m totally cool with, because I like to have time to get my breakfast together before the work day officially starts.  Today’s breakfast: 1 hard boiled egg, 1 hard boiled egg white, 1 Thomas’s Better Start Lite English muffin toasted with 1 tablespoon of Land o’ Lakes Lite Butter Spread, and Tazo Organic Chai (my most favorite) with skim milk and 1 splenda. I love breakfast so much. I also love my owl mug so much. I really should give him a name…thoughts?  (Thanks with love to my mother and father in law who got it for me for Christmas this year. 🙂 )

My delicious breakfast.
My delicious breakfast.

8:00 am: So begins another day at work. I usually start the day answering emails from whomever I receive them, typically editors responding about their book proofs. I check up on some news, chat with my most favorite office mate ever Adrienne about this weeks episode of Girls (which was cray – btw) and get to checking over some editor proofs.  I work away my morning!

work, work, work!
Work, work, work!

10:30 am: My belly usually starts to rumble around 10 or 10:30 every day so it’s snack time! My friend and co-worker Nicole made cinnamon toast and the office smells amaaazingggggggg. But for me today, I keep my snack simple with a mini apple. I proceed to work until lunch time!

Chomping on my apple... like a boss.

12:15 pm: I’m so super excited for lunch today. I have leftover stir fry from last night, which I whipped together in 10 minutes thanks to all of the conveniently packaged Wegmans products I got this week.  Wegmans is absolutely my favorite grocery store and I love all of their store brand products – especially the “Food You Feel Good About” line. (Heh – they should be paying me for this kind of advertising!) Seriously though, pre-sliced chicken stir fry strips already coated in cornstarch (I had a coupon so I took advantage), frozen shelled edamame, bell pepper, snow peas, scallions, and cilantro all combined with Wegmans Sesame Garlic Sauce with brown rice. Friggin delicious I say. For dinner AND lunch the next day..like today. 🙂

Hello gorgeous. Get in my mouth!
Hello gorgeous. Get in my mouth!

12:30 pm:  One of the perks of working at the same company as my husband is that we get to enjoy lunch together everyday! Today we ate lunch at our desks so that we had enough time to go out and grab a few things he needed from the grocery store. He also snagged a coffee while we were out.

My goofy husband enjoy his afternoon joe.

1:30 pm: Lunch is over and it’s back to work I go, but not before making myself a big cup of green tea to energize my afternoon!

Pure and unadulterated. Tea makes me so happy. Please see my tea face in my previous post.

3:00 pm: It’s snack time again. I reheat my green tea which has gotten cold on my desk (which is pretty typical for me). This doesn’t bother me because I like to make sure I get up at least once an hour and walk around a bit. I have 8 Quaker Quakes Mini Chocolate Rice Cakes with 1/2 tablespoon of crunchy peanut butter and make little sandwiches out of them. They’re so much fun to eat!

One of my favorite sweet snacks that I never feel guilty eating!

5:00 pm: It’s quittin time! Johnny and I hop in the care to start the commute home. I don’t fall asleep immediately, but I do wind up falling asleep about ten minutes into the drive I think. I can’t help it – I ALWAYS fall asleep in cars. It’s a blessing and a curse really. But hey – by the time I wake up we’re just about home!

5:45 pm: When we walk in the house it smells like tacos and I couldn’t be happier. I really don’t use my crock pot enough! All I have to do to get dinner on the table is shred some cheese and chop up a few scallions and cilantro.

One big, warm bowl of delicious.

6:40 pm: My belly is happy, the dishes are done, Quincy’s been fed, and I’m off to yoga!

7:00 pm: There’s a substitute yoga instructor tonight. I’ve taken a few classes with her before. Her classes are much more relaxed and I sweat a lot less than I do in my usual yoga class, but it’s still great to stretch out and I work on focusing on my breathing. She also had to cut class a few minutes short so she could make it to the airport in time or something like that. That’s fine be me though, because I head to Starbucks after with my friend from class for some girl time.

Preparing for 40 minutes of peace.

8:00 pm: Oh Starbucks, how I still love/hate you all at the same time. (Mostly love. *sigh*) Seriously. I’m intrigued by the new Vanilla Spice Latte, but it’s not available sugar free so I don’t go for it tonight. Instead – I order one of my standards – a short-decaf-nonfat-latte with 1/2 a pump of sugar free vanilla and cinnamon dolce sprinkles (Heh – can you tell I used to work there?) . My friend Ashley gets a Vanilla Roobios tea and we proceed to sit and chat about life until we’re given the 10 minute warning.

My little latte is short - like me!

10:15 pm: I’m finally home for the night.  Quincy greets me with zeal and return the excitement and snuggle with him for a few minutes. I hop on my computer and finish this post!

There it is!

A day in the life of me! I really picked a good one to get this started on. I’m just about ready to hop into bed and it’s really wonderful being able to take a moment to reflect on what a full, happy day I had today. I hope I didn’t bore you too much. Please let me know if you’d like to see more posts like this one in the future. It’s definitely a different kind of blogging experience! I certainly enjoyed it. I hope you did, too. Sweet Dreams!
