A Working Mom and Her Pancakes

I’m not going to lie to y’all – I have been BUSY!

But since I’m being honest, I can say that I kind of love it!!

Being back to work has been an adjustment, of course, but I think we’re finally… sort of… almoooooost… in a groove! This groove does require being in bed by 9:30 (if I’m lucky) and waking up at 5:00 – but it’s totally a groove!! Hopefully this week I’m going to try and give you an updated “day in the life” kind of post. I always think those posts are super fun! But for now – here’s what’s been up with THIS buttercup!

I’m very lucky that the staff at KinderCare have been so accomodating and willing to send a fairly nervous Momma photos of her babe. Of all the one’s I’ve received, this is the one where Emma is the happiest lol.

Obviously, Emma hasn’t been thrilled at the prospect of being dropped off with strangers. But after three weeks – she’s downing at least two bottles and eating bits and pieces of solids, too, which makes me very happy! Dropping her off is kind of rough, but I’ve kept it together!! Once I’m at work, though, I hardly even have time to check my phone to see how she’s doing before it’s time to head out again! Time has seriously gone by so, so quickly! I can’t believe it’s been three weeks back to work already. I’m loving every second of my new job! (I’m a Project Manager for an Internet Marketer in Harrisburg). I kind of just got thrown right into the fire and am already working with clients – but I can’t imagine it any other way. I learn best by doing, so I think it’s working out pretty well.

I’ve resorted to some serious meal prepping since I’m so busy. I’m all about salads in a jar for lunch. I’ve done an Asian one, a Greek one, and a Southwest one. This week I’m thinking Strawberry Spinach. I plan to write a post on them soon – so we’ll see how that goes. 😉 Hardboiled eggs and string cheese are my snacks of choice – as are grapes, sugar snap peas, baby carrots, and the occasional rice cake with peanut butter and banana on top.

Breakfasts have been protein smoothies, overnight oats, and eggs and avocado toast.

On a good day – I’m up at 5:00am, I feed Emma who then goes back to sleep for a bit (on a good day), I shower, get ready and have time to eat some breakfast before I grab the babe head out the door. Having a flex start time is amazing because I don’t need to stress if I’m running a few minutes later than I’d prefer because I can show up anytime between 8:00am and 10:00am…it’s pretty glorious. Obviously as an early riser I do what I can to get there for 8:00am. So far so good!!

emma and her drawerEmma bear is seriously on the move, lately!! And getting into everything! We’ve officially had to start baby proofing…but this drawer just has oven mitts in it…so it’s hers now lol.

And o0o0o0o0o!!!! I had a lovely first Mother’s Day, thanks for asking!!! The hubs and the babe took me to brunch at a place in the Burg I’ve been dying to try – Home 231. I got not 1…but 2 mimosas (I know, I’m wild) and huevos rancheros which were effing delightful. I struggled to pick something, but it’s pretty much a guarantee that if a menu has huevos rancherors Imma get it.  Hubs got a burger and fries with some Troegs Perpetual IPA – of course. We brought Emma cheerios so she was a happy camper!


Being back to work really does make me appreciate the weekend again!! Last weekend, I made Em and I matching banana oat pancakes for breakfast. There is something about mini breakfasts that just make me happy inside. She at about half of one of these babies and thoroughly enjoyed the peanut butter on top. I ate all of mine…and one of hers. But I don’t feel bad about it lol. We still haven’t given Em chocolate, so I reserved the chocolate chips for me. Mu-hu-hahaha.

Gosh, don’t you just love breakfast food?! All I want to do now is eat these pancakes. Here is the foolproof recipe!!

Mommy & Baby Banana Oat Pancakes

  • 1 ripe banana, smashed
  • 1 egg (if you haven’t given your baby a whole egg yet, i suggest two yolks.)
  • 1/4 cup rolled oats

Combine ingredients in a mixing bowl. Cook on a griddle over medium heat… like you would any other pancake… and serve!!

I know, that recipe isn’t the most specific. But if you don’t know how to make pancakes I’m sure there is a video on youtube that will show you how… in fact….here ya go! Have at it!! The internets is great, isn’t it?

WIAW – The Baby Shower Edition!!

Hello, friends!! I hope you’re all spectacular!! I’m so thrilled it’s Wednesday!! It’s been a very busy few weeks, and in lieu of a traditional day of my What I Ate Wednesday eats (thanks, as always, to Jenn at Peas and Crayons for hosting) I’m finally sharing some photos from my absolutely AMAZING baby shower!!


I seriously couldn’t have asked for a better shower or two better ladies to put so much time and effort into making everything perfect!! The “theme” was books and brunch, and though I had a say in that, they took the theme and ran with it, and I know that I couldn’t have done it better myself!! Here I am with the two hostesses and two of my best friends/family on the planet, Susan and Melinda!!

I made sure Johnny stayed for a few photos before he and all of the gentleman made their way to Troegs Brewery for an afternoon of beer and boy time. Here we are with both of our Mamas and Melinda!

The cake was enormous and absolute perfection!! Annnnnd was all of my favorite flavors. Carrot cake on the bottom, lemon cake with raspberry filling in the middle, and red velvet cake on top! (The red velvet was a surprise from my super thoughtful, wonderful baker of choice – Wendi – from Sweet Treats Cake Boutique in Mechanicsburg. She did our wedding cake, and our gender reveal cupcakes, and will probably be making any cake I need in the future, forever. Lol.) There was an adorable quote from Charlotte’s Web on the bottom, which was one of my favorite books AND movies growing up. 😀

The ladies set up a onsie station for guests to make a onsie for Emma. I must say, there were some cute ones!! (And Nicole, if you’re reading this, when I showed Johnny the Yankees onsie you made he was like “I’m going to burn that.” What’d I tell ya!!)

I’m super spoiled and I got to pick out all of the tea!! Some of my favorites that I included are a Decaf Ginger Peach and Decaf Chai, Blackberry Sage, Peachy Green, English Breakfast, and Lady Gray! Melinda and Susan also decorated the shower with adorable, framed prints with quotes from some of my favorite books AND I got to keep them all to decorate the nursery with!!

I wish I snapped a photo of the yogurt bar sooner – but everyone loved it!! Myself included. I, personally, had a huge bowl of yogurt with blueberries, strawberries, raspberries, walnuts, annnnnnnd chocolate chips. I also neglected to snap a picture of the WAFFLE BAR!!! To which I returned more than once to snag a little waffle with some nutella, and peanut butter, and more berries, and whipped cream. It was perfect.

I drank chocolate milk out of little pink champagne flutes and couldn’t’ have been happier. I should also note that, unpictured, there were chocolate chip and blueberry mini muffins, banana bread, oat bars (all made by Susan and Melinda) – as well as doughnuts, a huge fruit platter, and a huge veggie and hummus platter. Susan even made a quiche recipe some of you might be familiar with – my bacon, broccoli, cheddar quiche!! There was so much delicious food and I know that everyone loved it!!

After going through the pictures taken while I was opening gifts, I’ve realized just how ridiculous my face is when I’m excited. Haha. I love it. I’m so thankful for all of the gifts we received, but I certainly wasn’t going to bore you all with a million pictures of me opening gifts, so here are a few with some awesome reactions!!

Huevos Deliciouso

Ello’ loves! It’s been a while, I know. I have decided, however, that I am not going to apologize for it like I usually do. It’s certainly not like I’ve been cooking and hiding it from you. Life has been super crazy busy and I haven’t had any free time (a.k.a Blog Time) until very recently.

So what HAVE I been doing, then? I’m so glad you asked!

Yes, that’s right. I got a job as a production assistant/copy editor for a lovely little publishing company just a few minutes from where I live and I couldn’t be happier!

Am I still going to school for culinary? You bet your sweet bottom I am. Class two nights a week. Work five days a week. WEEKENDS OFF! It’s absolutely insane to me to sleep in on a Sunday but I am loving every second of it.

What I love most about sleeping in, and this shouldn’t come as a surprise to you, is waking up to BRUNCH!

Anywho, this weekend was one of the first weekends I’ve had off with NOTHING to do in I can’t even tell you how long. I knew I had to make something delicious – something egg-ceptional if ya know what I mean.

I’ve got it!!!

How does this sound?

One perfectly cooked sunny-side up egg on top of two perfectly toasted corn tortillas withy melty sharp cheddar cheese served with a combination of sweet red bell peppers and smokey chipotle chicken sausage??? Do you picture something like this?

I can’t lie to you guys. This was awesome. Part of me wishes I had some black beans and some cilantro to throw into the mix, but like I said, my refrigerator was pretty barren, and this was delicious either way. I hope if you decide to make it that you enjoy, too!

Chipotle Sausage Hash

(serves 1)

Begin by placing the two tortillas on a sheet pan and top with cheese. Place in 350 degree oven until cheese melts and tortillas are toasty.

Meanwhile, heat the sausage and peppers in a small skillet until brown.

For the perfect sunny side up egg – heat a small skillet over low heat for five minutes and melt butter. Crack your egg into a separate bowl and gently slide into the pan. Cover and let cook for about two minutes, until the whites are almost completely set. Remove cover and add 1 tsp of water and quickly replace the cover. Let cook two minutes more until the whites set completely.

Top tortillas with the sausage and peppers, egg, and scallions.

Sunday Brunch

After an insanely busy first week of school, I had the weekend to sleep in and recuperate. So of course, I slept until noon. Bwahahahahahaha!

Anywhosers, nothing makes me happier in the morning/afternoon than a delicious meal with my love bug. So I woke up, got my tush in the kitchen, popped on my new iPod (complements of the aforementioned love bug this Christmas – golly he’s the best) and I got to work.

“What was on the menu, Jen?!”

I know you’re all dying to know.
  1. Jiffy Corn Muffins. *Gasp* From a box?! Yes.  Because they are cheap and delicious and take all of seven seconds to mix up and bake.
  2. A fresh, hot pot of coffee.
  3. Fresh naval orange segments.
  4. A Caramelized Onion and Spinach Frittata.

Is your mouth watering yet? Don’t lie to me, I know it is.
And if for some insane reason it’s not, let’s take a look shall we.

Mmmmmmmmmmmm. Brunch.

You can’t tell me you don’t want some of that. I really insist you make this for yourself. Perhaps this weekend. You won’t be sorry. 🙂

Caramelized Onion
and Spinach Frittata

  • 1 tablespoon unsalted butter
  • 1 large white onion, sliced thin
  • 1 tablespoon garlic, minced
  • 2 cups spinach, washed and dried
  • 4 eggs
  • ½ cup nonfat milk
  • ¼ cup italian cheese blend, plus 1 tablespoon
  • 1 teaspoon pepper
  • 1 teaspoon italian seasoning
  • 1/4 cup parmesan cheese

In a large skillet, melt the butter over medium heat. When the butter is melted, add the onions. Season with pepper and italian seasoning.
Reduce the heat to low and allow the onions to cook until a caramel color is reached and onions are soft. (This takes patience, as it can take about a half an hour for the onions to caramelize completely. It’s worth the wait.)
Add the garlic and the spinach and allow it to wilt and reduce in volume.
Preheat the oven to 350 degrees.
In a large bowl, whisk together the eggs,milk, and italian cheese blend. Pour over the onion and spinach mixture. Raise the heat on the pan to medium high and allow the eggs to set for about 10 minutes, using your spatula to keep the sides loose.
When the eggs are mostly set and the top still appears runny, sprinkle with reserved cheese and place in your preheated oven until the top is set and the cheese is melted and brown, about 7 minutes.
Let the frittata cool for ten minutes before removing it from the pan.
Slice into wedges and serve!
