WIAW #18 – Meatless Monday!!

Ello’ loves!! (Yup, when I typed that I said it out loud with a British accent. Don’t judge me.)

I ‘ope you’re all splendid t’day! (Still British. Only more like Hagrid this time.)

I’m just chugging along this week looking forward to the weekend!! Sometimes, I can’t decided whether it’s good to always look forward to the weekend … or if it’s bad to not try and enjoy the present moment. I do what I can to enjoy the 40 hours a week I spend at work…but ya know…I’d rather be doing yoga… or eating. ūüėÄ

Oh well! At least we all always have What I Ate Wednesday to get us over the hump, right?! RIGHT!! [Shout out to Miss Jen at Peas and Crayons! Word up, chikadeee!]

I thought about doing what I ate Sunday this week…and I even started taking pictures of all my food. Theeeeeen I forgot. Oopsies!! So, instead, today you shall be observing my Monday. More specifically, my MEATLESS Monday. I love that I’ve gotten to a point in my life where I go days without eating meat and I don’t even notice it until I gather all of the photographic evidence together. Heh. It’s certainly not a bad habbit, amiright?!

Mmkkay enough jibber jabber. On to the food!!

Breakfast:¬†Behold my latest breakfast obsession!! It’s glorious, I tell you. I take two Wegmans brand organic blueberry waffles and toast em up. I smear a tablespoon of peanut butter onto waffle number one right out of the toaster so that it gets all melty when you spread it. Then, I smother it all with a cup of frozen berries that I microwave for 45 seconds to warm through and turn into a delicious berry sauce. I top it with waffle number two and devour. It’s perfect. I love everything about it. Except for when I finish it…because all I want to do is keep eating it!!

Snack: 1 oz of 2% pepperjack with 6 triscuits. It’s my go to morning snack lately.

cheeseandcrackersLunch: A huuuge delicious salad of spinach, cherry tomatoes, carrots, red onion, yellow bell pepper, avocado, and two sliced hard boiled eggs. I drizzled it with some balsamic vinegar and just a tiny bit of evoo. This is probably one of the simplest salads I make and every time I do I’m just like “BEST SALAD EVER WHY DON’T I MAKE THIS MORE.” Then I forget about it. Not this time, Jen. At least I hope!

saladBeverage:¬†Johnny and I snagged some beverages on our lunch break on Monday. Sometimes we’ll just eat at our desks so we can get out of the office for an hour or so. I had one of the most bizarre hot chocolates of my life. I ordered a nonfat hot chocolate and the woman making it was like “would you like to try it with our sugar free syrup” and I was all “Yes, please.” Then I got it, and sipped it, and well…have you ever had like…a chocolate flavored hard candy? Where you’re like…this tastes kind of like chocolate…but it doesn’t really feel like I’m eating chocolate. Anyone? Bueller? Yeah – well that’s kind of what this tasted like. Definitely not something I would get again. But I enjoyed it while I had it. At least the foam on top was perrrfect!!

cocoaSnack:¬†Gosh I’m dying for warm weather so I can eat cold snacks all the time!! I’m loving that it’s warm out now, but dreading that there is supposed to be snow again tonight. Come on, man! Sigh. Over the weekend, Johnny and I were discussing my recovery from baby this summer and I’ve officially decided that I’m really not worried about it. I always have a much easier time eating clean in the summer when I can grill everything and live off of fresh fruits and veggies and other delicious healthy things meant to be consumed cold! Liiiike icy cold greek yogurt mixed with a touch of peanut butter and honey to dip fresh, crisp apples in! (This apple – not the best. C’est la vie.)

applesandyogurtDinner: Melinda and I had a dinner date on Monday! We caught up on all of her weddding planning and all of my baby planning at Neato Burrito. It’s a Central PA Burrito place with a few locations. Personally – I like it waaaaaaaaaaay more than Chipotle. The hubby does not. Thus why I get it with Melinda. There loads of options for just about anyone. Melinda pretty much got a bowl of nachos with a little chicken and lots of veggies on top. I went with a burrito, which is rare for me, but I was in the mood for the wrap and not so much the rice. I had a jalapeno cheese wrap with their amazinggggg vegan Troegs three bean chili,¬† just the tinnnnnniest bit of brown rice (just so it didn’t get too soggy from the chili), a wee bit of cheese, cilantro pesto, smoked chipotle salsa, lettuce, tomato, onion, and guacamole. Oh yeah, and I had them throw in a handful of crushed tortilla chips!! That’s kind of their thing. And it’s brilliant. Man. Everything about this burrito was perfect. I pretty much housed the whole thing, minus the last little bit of tortilla at the bottom that gets all folded up and actually contains no filling at all. (The worst part of burritos!!)

Well, I certainly loved my veggies on Monday! I’ve actually been loving them all week, like a boss. Salads for lunch. Stir fry for dinner. Tonight I’m making some chipotle chicken sausage wraps with my southwest slaw salad.

WIAW #16

Ooopsie Daisy! It looks like I skipped over my WIAW #15 and did two #14s instead. Pregnancy brain. Oh wells. Onto #16!! As per usual (lately, anyway) here are my eats for Monday. I’m actually super pleased with my diet this week, I’ve been eating like a champion and definitely loving my veggies this month! I’m thinking perhaps I’ll share some weekend eats on Wednesday soon, just for funsies. I tend to eat a bit less healthy and more like a real person (like pizza!!) on the weekends. We shall see. Either way, big thanks to Jenn at Peas and Crayons for the fab link up!! Breakfast: I mentioned in my post on Monday that Central PA is in desperate need of a Trader Joes, annnnnnd this Multigrain Triple Berry with Flax and Chia Instant Hot Cereal has a lot to do with it. I snagged this box on Saturday and I don’t know what to do…because it’s amazing and I want to keep eating it… but I don’t want to run out, either!! I had one pack for breakfast on Sunday and it wasn’t enough…(then I proceeded to have a bowl of¬†cantaloupe, 2 slices of leftover¬†Margarita¬†pizza, 4 brownie bites, and a glass of milk. Yeah, I should¬†definitly give you guys a peek into my weekends, haha!) ¬†two packs on Monday did the trick!!! Oh my gosh, it’s so delicious and berry-y. Enjoyed with¬†decaf earl gray – obvi.

Snack:¬†I snacked happy Monday. Literalllyyyyyyyy. Oh gosh, look at me, I’m cheesin’ over here…ahhhh I did it again. Food puns for days!!!

Lunch: Lunch was pretty simple on Monday. I had a pita spread with a bit of roasted garlic hummus (obsessed!), a Morning Star Farms Mediterranean Chickpea Burger, some feta, romaine, and bell peppers. green lunch

Snack:¬†Snack number two on Monday was is one of my faves! Since it’s been warm enough in my office I’m able to enjoy some cold snacks more often. I had some plain nonfat greek yogurt mixed with a tablespoon of peanut butter…and 1/2 a banana. I, personally, prefer my bananas suuuuuper ripe. This one was perfect … except for the big bruise it had about halfway down.¬†About an hour later I was still a weeeeee bit hungry, so I nommed on two of my banana protein oat bites while I finished up my shopping list/meal plan for the week!

Dinner:¬† We had dinner at Wegmans on Monday night, which we often do when we pick up groceries right after work instead of on Sunday. I love that Johnny and I can both get whatever we want!! He had a meatball sub and a Victory IPA. I enjoyed some sesame green beans (my FAVORITE option from the Hot Asian food bar at Wegmans), some broccoli and mushroom stir fry (which is new and was also super tasty!), and a California Summer Roll!! Although I still miss my tuna and salmon rolls, I’ll be pretty darn happy munching on these whenever a sushi craving hits until June.

wegmans dinner Dessert: We’ll call this dessert, because it happened after dinner time, but I’m pretty darn pleased with my whole Monday of eating! My “dessert” was a fancy glass filled with Vanilla Almond Milk (which I only treat myself to when I have a coupon because I’m trying to be more fiscally responsible) and a handful of Blueberry flavored Craisins. Delish!!

almond milk!So folks, what’s new with you?! I had a doctor’s appointment today and little miss Emma’s heart is thump-thump-thumping away while she tumbles around in my belly. Also, the doctor totally buttered me up today and told me I look AMAZING and that if he didn’t see my belly he’d have no idea I was pregnant!! Thanks for making my day, doc.

Smoothies & Scones

Hey folks! I hope you enjoyed your weekend! Did you do anything fun or exciting? I didn’t do much of anything this weekend, and I must admit it was pretty fantastic! With the holidays winding down Johnny and I got to enjoy our first weekend of nothingness in what feels like fooooooreverrrrrrr and I made sure to take advantage!!

How?

By cooking my face off!!!

And I’m pleased to say that the time not spent cooking/eating I was either working out… or… cleaning…or at Target with Melinda and Kyle…orrrrr watching Parks and Rec. Regardless, it was faabuloussssss!

Now I don’t know about you, but without an alarm set my body naturally wakes up after 8 hours of sleep. I’m typically always up before Johnny. Yesterday morning¬† was no exception. I was up at 8:00 am and I was fiiiiinally able to try out my brand spanking new Bella Rocket Sport Blender!

I love making smoothies for breakfast, but I have a problem you see. I HATE measuring ingredients. That’s why I’ve never been much of a baker. The exactness of everything frustrates me. When I make smoothies in a standard blender, I always tend to overdo it and throw in a little of this and a little of that and I ultimately wind up with enough for two smoothies! My husband doesn’t care for most of the smoothies I make so he doesn’t drink the extra, and I can try to freeze and it drink it later but I wind up forgetting about it. It’s really quite a conundrum. For Christmas, Johnny picked up this single serve blender for me and it’s absolutely perfect! The first smoothie I made in it is one of my standards, as I typically always have everything on hand for it. Here is the recipe!

Berry Almond Smoothie

serves 1

  • 8 oz vanilla soy milk
  • 1 8 0z container of berry flavored greek yogurt (I used Wegmans Brand Triple Berry, but any berry will do!)
  • 1/2 cup frozen mixed berries
  • 1 tablespoon almond butter
  • 1/4 teaspoon almond extract
  • 1/2 baby spinach leaves, packed
  • 1 tablespoon ground flax seed

Place all of the ingredients in your blender and whiz until combined! (Note: If you’re using the same Bella Rocket Sort Blender, I suggest adding the ingredients in the exact order they appear here. That way, when you flip it upside down to blend it, the spinach is closest to the blades and will incorporate nicely. Putting the milk in before the yogurt will also prevent the yogurt from getting stuck at the top of the blender!)

I enjoyed my smoothie with a piece of whole wheat toast with a little smart balance and a sprinkle of cinnamon sugar! Noms!

This morning I was up early again (7:45! Yikes! Getting ready for baby, haha!) and¬† it was suuuuper rainy and gloomy outside. I decided I wanted something warm and cozy for breakfast… and something a little different and fun! No oatmeal for this chick today!

I was all alone in the kitchen, even the puppies were still sleeping. I looked through my pantry and I decided I knew exactly what I wanted to make. Gingerbread Scones!

Now, ya know how I mentioned before that I wasn’t much of a baker? It’s really the truth. Muffins and quick breads are the only thing I’ve ever excelled at and that’s primarily because the recipes are pretty forgiving. Scones…dough that needs to be kneaded and cared for…I grit my teeth and searched for a recipe. I found one that sounded great at¬†joyofbaking.com¬† and I’m pleased to say I followed it ALLLLLMOST exactly. The result was a perfectly light and flaky scone that tasted like Christmastime. I was thrilled with my results!¬† Here is the recipe, I’ve noted the few changes I made!

Gingerbread Scones

  • 1 3/4 cups all purpose flour (I used King Arthur White Whole Wheat Flour)
  • 3/4 cup old fashioned rolled oats
  • 1/3 cup light brown sugar (I used dark brown sugar)
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup cold unsalted butter, cut into pieces
  • Zest of 1 lemon¬† (I used the zest of an orange instead! I prefer using orange in my gingerbread recipes!)
  • 1/3 cup dried cranberries
  • 1/2 cup chopped pecans (this was not a part of the original recipe at all, I just love pecans!)
  • 1/2 cup buttermilk (I used skim milk – it worked fine!)
  • 2 1/2 tablespoons unsulphured molasses
  • 1 teaspoon pure anilla extract
  • 1 large egg
  • 1 tablespoon milk

Preheat oven to 400 degrees and place rack in middle of oven. Line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, oats, sugar, spices, baking powder, baking soda and salt.  Cut the butter into small pieces and blend into the flour mixture with a pastry blender or two knives. The mixture should look like coarse crumbs.  Stir in the lemon zest and dried cranberries, if using.  In a separate bowl mix together the milk, molasses and vanilla and then add the milk mixture to the flour mixture.  Mix just until the dough comes together. Do not overmix the dough.

Transfer to a lightly floured surface and knead dough gently four or five times and then pat the dough into a circle that is about 7 inches round and about 11/2 inches thick. Cut this circle in half, then cut each half into 3 pie-shaped wedges (triangles).  Place the scones on the baking sheet.  Make an egg wash of one well-beaten egg mixed with 1 tablespoon milk and brush the tops of the scones with this mixture.

Place the baking sheet inside another baking sheet to prevent the bottoms of the scones from over browning.  Bake for about 20 minutes or until golden brown and a toothpick inserted in the middle comes out clean.  Transfer to a wire rack to cool.

**I made my own glaze for this recipe, rather than the one provided with the original recipe. (I needed to express my creativity somehow!) All I did was microwave 2 oz of fat free cream cheese with 1 tablespoon of pure maple syrup. I mixed it all up and spread it on top! These scones were perfect!!!**

Yes, you’ll note that is a mug of milk with my scone. I thought I wanted tea…so I got out a mug. Then I decided that my new big fuzzy blue robe I was lounging in (thanks, Ma!) was actually doing a fine job of keeping me nice and toasty so I decided I didn’t want tea and that I wanted a nice cold glass of milk instead. Buuuuuut and I didn’t want to get out a glass…so I drank my milk from a mug like the classy gal I am!! It was all delicious. ūüôā

Yoga, Celebrations, and Go-To Breakfasts

Well hey there!

I hope you’re doing well!

You’ll be pleased to hear that I’ve officially started to do yoga EVERY weekday morning – even if it’s just for 10 minutes (which, at this point in time, it usually is). It’s tough for me to drag myself out of bed before 6:00 am but I’ve been managing and I’m super proud of myself! (CELEBRATE!! WOOOOOT!!) I’ve been trying to vary my routine a little bit but it usually starts off with some sun salutations and maybe a quick warrior sequence and extended side angles. I love a good stretch in the morning, and extended side angle is a great one. I’m getting comfortable enough to bind it lately, too. A few months ago I would have been like “heeeeeeeeeeelllllll nooooooo“. For all my non-yogis out there, here’s what they look like (courtesy of fitsugar.com)…

I’ve even been trying to throw in some yoga midday on my lunch breaks at work! (YOGA ALL THE TIME!!! CELEBRATE!! WOOOT!!) Here’s a silly picture Johnny took of me on lunch this week fiddling around with dancer pose. It’s not a pose I do regularly in class, but it’s definitely a pose I’m practicing more at home…and on lunch! ūüôā

I spent part of my weekend in New Jersey for my friend Sue’s baby shower and it was a delightful time. (CELEBRATE!!! BABY!!! WOOOOTT!!)

Have you ever played the game at a baby shower where you have to guess which candy bar is melted inside of a diaper before? I hadn’t until this weekend…and I rocked it. Still not sure whether I should be happy or sad about that – haha – but either way I won an adorable little teapot for being the only person at the shower to guess them all right (CELEBRATE TEAPOT VICTORY!!)

Anywho, besides yoga I’ve been cooking – of course. I’m starting to go through a breakfast rotation every week. I’m cool with it, it makes life easier and I’m not eating the same thing EVERY day. It does make posting new recipes a little tougher, though.¬† Here are a few no-recipe-recipes for some of my go-tos lately.
