What I Ate Wednesday # 29 – Ain’t Nobody Perfect

What I Ate Wednesday Button

Breakfast: Chocolate Shakeology with skim milk, spinach, 1/2 a banana, and peanut butter after my core workout. Harcore on the Floor is no effing joke. This was a prime reward. For serious.

Snack: Ezekiel toast with avocado, a hard boiled egg, and a sprinkle of Frank’s Red Hot. AKA the best combination of foods on toast ever of all time.

Lunch: Em and I had matching lunches – which is my favorite kind of lunch!  I know I will still have the weekends for matching lunches with my little bug, but I’m really trying to make the most of this week with her!! She had chicken, sweet potato, and broccoli. I had the same – but my chicken had a wee bit of BBQ sauce, topped with cheddar and green onions. Today was a lunch bust, as I put her in her high chair and she lost her mind. She napped through lunch time. Sigh. Tomorrow is another day.

Snack: If you read my meal plan in my last post, you’ll notice this snack was not included. Em was having a pretty nurse-heavy day yesterday and on those days, if I’m hungry, I’m not going to starve myself. I get what I call “the hungry shakes” if I don’t eat enough. Ya know – where you’re so hungry that your hands start shaking and ya get all light headed. Es no bueno! That was about to happen…soooo…insert extra snack.  Ezekiel toast with almond butter, 1/2 a banana, and honey AKA the other best combination of foods put on toast ever of all time. Plus decaf iced coffee with skim milk and a teaspoon of unsweetened cocoa powder. Not gonna lie – the cocoa powder wasn’t the best decision I’ve ever made. I still drank it, obvi, buuuuut I don’t think I’ll be doing that combo again anytime soon.

Snack Again: It was my last night working in the Kid’s Club at my gym, and I brought a snack and a big ol’ bottle of water to get me by. Yesterday was a bag of snap peas and carrots. Snap peas are my jam lately. I snack on them like it’s my job!

Dinner: Since about January when I started working every Tuesday night our Tuesday’s officially became Taco Tuesday. It’s so quick to make when I get home after 7:00 PM and I’m starving and the hubs just plain loves tacos. I had pretty much always have a taco salad. This right here is a big bed of romaine, cherry tomatoes, peppers, onions, carrots, 3 ounces of turkey taco meat, 1 crumbled taco shell, and a tablespoon of cheddar cheese. Johnny left just a tiny little bit of meat left in the pan when he was done with his…so I may have eaten that too…in a taco shell…with some cheese…over the sink. #noshame

Snack: So after dinner I get Johnny’s food together for work for the following day – like the outstanding wife that I am – and I always make him two peanut butter sandwiches. On a good day, I can control myself and put the peanut butter away untouched. Yesterday was not a good day. I may have had a giant spoon full of peanut butter…sprinkled with chocolate chips. Okay  I may have had FOUR giant spoons of peanut butter sprinkled with chocolate chips. Ugh!  I can’t be perfect all the time…amiright? Peanut butter is my weakness. It’s a problem. And the first step to having a problem is admitting you have a problem, right? Or something like that.

Chipotle Chicken Chili

First of all…the fact that I’ve had the opportunity to post TWO DAYS IN A ROW…is madness. Complete and utter MADNESS!! I love my baby girl, but boooooooooy do I love nap time. Muhuhahahaha.

Not only am I sharing another NEW recipe today, but this is another super simple crock pot recipe! Just in time for fall, amiright? I have never loved my crock pot as much as I do now that I am a mom. The faster I can get something done, the more likely I am to eat it without having a baby on my boob! Though, I can’t lie, I’ve gotten pretty great at doing things with one hand because I have a baby in the other…or balancing her perfectly on the Boppy while I eat OVER her. I prefer to avoid that if I can, though, heh.

Anywho, the Falcons were playing last night (What a game! I’m not sure I’d really even call that a game…poor Bucs.), so I wanted to make something appropriate for football viewing. Chili was the obvious choice. But without having any beef on hand I decided to go for a chicken version.

BEST. CHOICE. EVER.

I posted a photo of the finished product on Instagram last night and had a few requests for the recipe. So here it is, my friends.

Words cannot describe how easy this chili is to make. You literally just stir everything together in the crock pot, add the chicken breasts, pop on the lid and BAM. You are a mere 5 hours from delicious!

Chipotle Chicken Chili

  • 4 boneless, skinless chicken breasts
  • 1 28 oz. can crushed tomatoes
  • 1 can white beans
  • 1 can pinto beans
  • 2 red bell peppers
  • 1 onion
  • 1 chipotle in adobo, minced
    (add more or less … depending on your spice tolerance. 1 gives it a nice kick, but you won’t be sweating)
  • 2 tablespoons honey
  • 1/4 cup chili powder
  • 3 tablespoons cumin
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons oregano
  • salt to taste

In the base of your crock pot, add the can of tomatoes. Fill the empty can halfway with water and add it to the crock pot. Add the beans, peppers, onions, and spices. Stir well to combine. Nestle the chicken breasts into the tomato mixture. Cover and cook on high 4-6 hours or until the chicken shreds easily with two forks. Shred up the chicken and serve your chili with cheese, avocado, and whatever else you fancy…just make sure you have plenty of tortilla chips for scooping!chipotle chicken chili

WIAW #23 – A “Cheat” Day

Ello, loves. Welcome to another lovely edition of What I Ate Wednesday – brought to you by Jenn at Peas and Crayons. This week I’m sharing everything I ate yesterday, which ultimately turned into a kind of “cheat” day and proves that I actually eat like a real person sometimes!! Onward!!

Breakfast: I had my 32 week checkup yesterday morning which meant that we were stopping for bagels before I dropped Johnny off at our friend Nicole’s so she could drive him to work. Typically, I say no to a bagel. Yesterday  was super rainy and dreary, though, so I decided it was time to join in on the fun! I had a garlic bagel toasted with butter!!! Most people I know are everything bagel with cream cheese kind of people. Sure, they’re delicious, too, but for me there’s nothing like a toasty warm garlic bagel dripping with melty butter. Yummmmmm and a half!!
bagelI didn’t have to kill too much time between dropping Johnny off and my appointment, but I still had about 20 minutes before I needed to head to the office, so I stopped at Panera and grabbed a decaf English Breakfast Tea and started perusing my latest issue of Women’s Health!!

Luckily my doctor’s appointment was earlier yesterday and went swiftly! All is well with baby and I, and I discussed “birth plans” with my doctor (and we both agreed they’re just plain silly!). I managed to make it to work at 9:20, but by 10:00 I was ready for a snack, so I grabbed the last few pieces of cantaloupe we had hanging out from my baby shower!!

Lunch: Lunch was simple yesterday, and I tried to keep it a little lighter since I knew I was having a bagel for breakfast. What we have here is some leftover fajita filling (chicken, black beans, peppers, and onions) with a wee bit of cheese and avocado on top. Ugly, but delicious.

Tea Time: I am such a happy camper because I have sooooooooooooooo much leftover tea from my shower!! This one right here happens to be my favorite!! It’s The Republic of Teas Decaf Ginger Peach. The regular Ginger Peach is delightful, too, but ya know…preggers. With a little drizzle of honey it’s pretty much impossible to be in a bad mood while you drink this stuff. It’s the best!!

Snack: I had a marathon meeting yesterday afternoon that usually only lasts about 30 minutes but lasted nearly 2 hours! As such, my snack time was a little thrown off. I just nommed a hard boiled egg to hold me over until dinner.

Dinner:Last night, Johnny and I had dinner with Melinda and Kyle before FINALLY going to see Captain America: The Winter Soldier!! There are a few pretty decent mexican places by us, but we frequent El Rodeo this most. We all pretty much always get the same thing every time. Johnny and Kyle both get the Sante Fe Nachos (nachos with beans, cheese, steak, and chicken) – Johnny with no sour cream but with guacamole, and Kyle with sour cream but with no guacamole (but he is kind enough to order it on the side so that I can have it!!), Melinda sometimes gets a veggie quesadilla or the nachos, too. Last night she got a steak quesadilla. Me? I have tried a few things on their menu – but I have gotten to the point where I always order their Carne Asada Tacos. I. Love. Them. So. Much. They’re the perfect portion of steak in three little corn tortillas with loads of tomatoes, onions, and fresh cilantro to devour along with it!! They also come with a side of beans, which I never finish but always smear a bit to my tacos,  and a really spicy homemade hot sauce. All of that, plus some guac. Heaven.

At the Movies: Let’s all be honest, does anyone actually buy their snacks IN the movie theater anymore? They’re so expensive!!! And sure, the popcorn always SMELLS great, but it never tastes as good as it smells. I’ve pretty much stopped bothering with popcorn at the movies all together. Plus, I always wind up with a kernel stuck in my teeth before the movie even starts so then I spend the whole movie sitting there being annoyed by it the whole time. *END MOVIE RANT* Anywho, after dinner we stopped at the grocery store and grabbed a few movie snacks. My husband is a Raisinettes kind of guy. They’re his favorite! I always struggle picking my movie candy. Peanut M&Ms, Goobers, or Reese’s Pieces are usually my chocoaltey go-tos, but I wasn’t feeling chocolaty. So I went with Sour Patch Kids!! Am I the only person who’s favorite are the green ones?! I feel like I am. Captain America was awesome!! And I didn’t eat the WHOLE bag, I promise! 😉

WIAW #21- Stuck in a Rut

Hey ya’ll!! So happy it’s finally Wednesday, wouldn’t you agree?! I’m terribly sorry for my lack of posts this last week. It’s been a pretty busy time – and I know it’s just going to get busier in the coming months!! When I get busy…I get stuck in food ruts!! Do you have the same problem? It’s a little disappointing that I was on such a roll posting a new recipe every week and then *BAM* the busy hit and it’s just sooooo much easier to plan meals that are tried and true rather than trying to get creative. On this week’s menu I’ve got all of my fallbacks – chicken fajitas, teriyaki tilapia with brown rice and salad, and chicken pesto tortilla pizzas. Of course I’m pretty lucky to only have to prepare dinner for the hubs and I a mere three nights this week – because Friday we’re leaving for South Carolina!! Woot!!! I am so excited to get our mini vaca on (I am less excited for the car ride and the amount of times I will need to stop to pee.)

Breakfast: Another one of my fallbacks, banana chocolate chip protein muffins. I made a double batch so we can take some on the road with us this weekend, too! Though I’m getting to a point where I’m so effing hungry all the time that these guys only fill me up until about 9:30 before I want to snack and I used to be able to make it to 10. I’m pretty sure it has something to do with the baby growing in my belly. I’m also pretty sure she loves these muffins, because after I eat them she usually does a little dance for about a half hour or so. I also had some decaf earl gray in my Charleston Tea Plantation mug to prepare for the weekend!!

Snack: My first snack of the day was a hard-boiled egg and some 2% pepperjack. This particular photo is NOT recycled. I do actually always make a smiley face with this snack…because why not?

Snack Again: Still hungry? Yes! At about 11 I munched on a gala apple.

Lunch: I made up a batch of my ravioli minestrone last Thursday maybe…either way…it was a big batch and I’m still enjoying the leftovers. This bowl was sans the ravioli with a little parmesan on top and probably more red pepper flakes than I needed, but it was delightful!

Delicious Beverage: As the weather is finally getting enjoyable, Johnny and I took a walk to the nearest coffee shop on our lunch break on Monday and I snagged my first iced coffee of the season! Just a decaf one with a wee bit of half and half and some sugar! Perfect!!

Snack: There have been times when I’ve asked myself over the last 30 weeks if I reaaaaally think I’m going to be a good mom. When I think about it, it’s so terrifying and exciting all at the same time. I feel like most great things are. (Like roller coasters!) Generally, I do. I think I’m going to be a pretty awesome Mom, actually. And I know that my hubalub is going to be an amazing Dad. I’ve already determined that my baby girl will lovingly be referred to as a number of food items as I’ve already started calling her “muffin” and “pumpkin” and “cupcake” when I talk to my belly. When I do have a moment of doubt, though, I remind myself that if I make snacks this pretty for myself – I’m going to make awesome snacks for my kids. Lol.

Snack: Carrots and hummus to tide me over.

Dinner: Johnny went out on Monday night so dinner was all up to me! I made myself a SEAT! Spinach, Egg, Avocado, and Tomato sandwich!! I found out at my last doctor’s appointment that I’m slightly anemic and I need to start taking iron supplements in addition to my prenatal vitamins. Although my diet is already fairly high in iron, it’s much higher in calcium, which can hinder iron absorption. I’ve been doing what I can since I found out to eat as many iron rich foods (like spinach and egg yolks!) as I can to make my body happier. I wilted two giant handfuls of spinach down in a small skillet and added two whole eggs that I cooked over hard. I plopped my spinachy eggs on some whole wheat toast with avocado and tomato slices. It was soooooooooooo delicious!! Sure, it’d probably be even better with bacon and cheddar cheese (but what wouldn’t be, really?), but I was trying to stay on board the health train.

Dessert:And obviously my day isn’t complete without sometttthing a little sweet to cap it all off. More peanut butter greek yogurt with chocolate chips please. Yes, the photo IS recycled….but that’s because I was too busy watching Harry Potter and The Deathly Hallows: Part II on ABC Family to bother snapping a photo of my snack when I had this perfectly good photo to reuse.

The Last WIAW of Winter!!

Hehehehe. Gosh I just love, Stitch! He’s my fave! He reminds me of my husband and my dog if they were combined into a single being…take that however you want it. Ha!

Anywho, I’m so happy it’s finally Wednesday!!! It’s been a pretty productive week for me so far, which is probably why this is my first post of the week!! Oops!! I had a loooovely weekend in New Jersey, a doctor’s appointment on Monday. (I took my glucose test and they took some of my blood and I DID NOT pass out. That’s two times in a row now where I’ve gotten my blood taken without passing out. I may very well be an adult just yet.), and had a pretty solid workout on Tuesday night. In fact, I’ll discuss that a bit more in a few because this week I’m sharing my TUESDAY eats!

Breakfast: Breakfast for me yesterday was the same Berry Ginger Chia Smoothie I linked to a few weeks ago. It’s so effing delicious I didn’t care how cold it was outside. I enjoyed it with a big old mug of decaf green tea!

Snack: My first snack of the day was an Apple Walnut Flax Muffin (recipe tomorrow!!) and I had it around ten. It’s soooo perfectly moist and nutty and cinnamony! I was hungry again around 11, so I nommed on an apple, served on my belly which seems to be getting bigger every day! I will be 28 weeks pregnant tomorrow and that is so crazy!!! I’ve even started to notice my belly wiggling around like jello when the little munchkin in there does her kung-fu! It makes me giggle. Every single time. Even if it’s inappropriate. Like in a meeting at work. Oops! If I don’t make eye contact hopefully no one will notice my giant goofy smile!

Lunch: For lunch yesterday I heated 3oz of shredded chicken in the microwave until it was nice and warm and then I mixed it up with about 1/3 of an avocado and a squeeze of lime juice. I smushed it all in a toasted whole wheat pita with some thin sliced red onion and crisp romaine lettuce. I’m usually all about spinach, but I really wanted the texture of the lettuce in this! Ya gotta change things up a little here and there, right? Right!

Snack: So thanks in large part to some fabulous strawberries I had over the weekend (that Susan so kindly provided me) – they are all I want to eat lately. I pretty much invented the best snack ever yesterday with some strawberries I had. I spread them with a cinnamon cream cheese laughing cow cheese wedge, and then rolled them in crushed pistachios. Sweet. Creamy. Salty. Perfect. Seriously. It’s going to be an issue if and when I run out of these ingredients.

More Snacks: Well my tummy started rumbling agaiiiin around 4, so I had some roasted garlic hummus with about 8 baby carrots and 3 triscuits. I brought more with me, but after munching on all of that I decided that my belly was happy and I tucked the rest away for another day.

Dinner: I had a pretty decent workout last night, focusing primarily on my biceps and back…but I threw in some random chest presses. Oh well. I also did a 20 minute walking interval on the treadmill. Sigh. I am really looking forward to being able to run again this summer! I wanted to make sure I got my protein on when I got home, but also didn’t feel like making a big elaborate dinner. Lately, when I’m doing my meal planning, I always have an “empty” weeknight slot where I just make eggs and toast. Last night was that night. Johnny gets 2 whole eggs plus 2 egg whites, 2 slices of american cheese, and 2 slices of whole wheat toast with some smart balance with omerga 3s. I made myself an omlette with 1 whole egg and 2 egg whites whipped up with some skim milk with red onion, portobello mushroom, spinach, and 2% mozzarella cheese. I had it with 2 slices of smart balancy toast, too. It was exactly what I needed!!

Dessert: Of course my life isn’t complete without dessert these days!I’m really hoping to break this habit once baby is born and I’m less hungry all the time. Of all the desserts I could have though, I don’t feel bad about this one…particularly because sometimes I eat it for breakfast!! It’s just 1/2 cup of plain nonfat greek yogurt with 1 (okay 1 HEAPING) tablespoon of peanut butter with some chocolate chips on top!! I love everything about it!! And obviously I’m feeding my muscles with more protein…and my baby with chocolate chips. Nom!!
