Comfort Food 101

This week I’ve been stressing a ton about school, work and life in general and I knew just what it would take to calm me down. Comfort food.

If I had to pick the three most simple, comforting and above all delicious foods out there I’d have to choose bread, cheese and soup. Period. If I happen across a combination of the three, well, I’m in food heaven.

This week definitely called for a combination of the three…

Tuscan Sausage and White Bean Soup

(with mozzarella pepperonata crostini)

The pepperonata recipe I used was from “Cook This, Not That” which is one of the most amazing cookbooks I have ever encountered. David Zinczenko and Matt Goulding – I applaud you gentlemen for making my life skinnier and tastier.

As for the soup – that’s all me. 🙂

Tuscan Sausage and White Bean Soup

  • 1 lb hot italian turkey sausage, cooked to package directed and sliced
  • 1 14.5 ounce can diced tomatoes
  • 1 can white beans, drained and rinsed
  • 2 tablespoons olive oil
  • 1 carrot, peeled and sliced
  • 1 small red onion, diced
  • 1 large zucchini, sliced
  • 1 small package frozen spinach, thawed and drained
  • 4 cups chicken broth
  • 1 teaspoon italian seasoning
  • 1 teaspoon granulated garlic
  • Parmesan cheese and Fresh Basil for garnish

In a large pot, heat olive oil over medium heat.
Add the onions, carrots and zucchini and cook until soft, about 5 minutes.
Add all of the remaining ingredients to the pot and bring to a boil.
Reduce the heat to low, cover, and let simmer 30 minutes.
Serve with parmesan and basil sprinkled on top!

    Comfort in a bowl?  Yes, please!
