It’s my belief that life is about finding balance in all things. You only live once (what up Drake) … but you only get one body! It’s my goal to try and find and share the best ways to make the most out of this one life without sacrificing things I love – like cupcakes and pasta – while maintaining a healthy body that I’m proud of!
Who am I? I’m Jen! (It’s nice to meet you!). I’m 24 years old and have spent the better part of the last 10 years in the kitchen experimenting with food. I studied nutrition for two years before receiving a degree in journalism. I studied culinary arts briefly at a local school and am currently in the midst of becoming a Fitness Nutrition Specialist through the National Academy of Sports Medicine.
It’s rare you’ll find me without a big mug of tea in hand… or maybe a big glass of wine! I’m originally from New Jersey so I love a good diner, taylor ham and cheese sandwiches, and disco fries. A few other favorites of mine that are a little less regional include matzoh ball soup, dark chocolate, blueberries, string cheese, guacamole, pad thai, and chipotle peppers!
My husband, John, and I were recently married near our Central Pennsylvania home. He loves to eat as much as I love to cook, so it works out pretty well between us! John makes me laugh every day and encourages me to do what I love. There is no one in the world I would rather spend all of my time with and I’m so blessed to have married my best friend!
A few other noteworthy things about me – I adore Zumba and I’m addicted to Yoga!! John and I frequent the gym almost every day. We’re even getting ready to run our first 5k together this summer! We’ve done a lot over the last year to try and lead a healthier lifestyle and you will see that reflected in my recipes!
I love preparing foods that are quick to whip up, super delicious, and won’t pack on the pounds. I also love to travel, hike, kayak, and spend time outside! I’m learning to golf, too, thanks to the hubs.
Also, just throwing this out there, I will take absolutely any opportunity I can get to eat lobster!
Quincy, our little man, loves to eat as much as we do. He’s particularly fond of bacon, carrots, and cheese…see!
